Meet Tony Gallo of Sardinia Enoteca Ristorante

Today we’d like to introduce you to Tony Gallo.

Tony, can you briefly walk us through your story – how you started and how you got to where you are today.
We open our first location in Miami Beach in October 2006, our second location in Delray Beach in October 2017, my self and my partner Chef Pietro Vardeu, we started in 2006 introducing a non popular Sardinian Cuisine, at first, was a little challenge because some of the dishes and wines from Sardinia people were not familiar with, but once they tried they love it, we like always to educate people with different food and wines, we are not the typical Italian restaurant, we are more authentic Italian cuisine more than Italian American, that is one of the reasons that we are successful, and obviously because of consistency. One of my passions is wine and we have 300 different labels on the list.

Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
Overall, these years definitely we have had some challenges and obstacles, but that is part of any business, the biggest challenge is to make sure that consistency is our priority, then there are different factors that are challenges but is part of any business, after 12 years of success in Miami Beach that is what I call a challenge, obstacles that are normal as well in business we always find some bumps on the road but we overcome them.

Please tell us about Sardinia Enoteca Ristorante.
We are considered an authentic Italian Restaurant that is what differentiates us from most of the Italian American Restaurants, we specialize in Sardinian cuisine, we also have a wood-burning oven where we cook most of the fish and meats, the wood oven gives a special flavor, we do in-house homemade Burrata and Mozzarella, we have 300 different wines labels on the list.

If you had to go back in time and start over, would you have done anything differently?
Most importantly, we have a very good staff and most of them they have been with us since the beginning, I give a good credit to them, because employees are very important, and also to our loyal customer that supports us for years
