Today we’d like to introduce you to Katherine Hernandez.
Katherine, can you briefly walk us through your story – how you started and how you got to where you are today.
This journey of the Pineapple Express Bar started in 2016, a female entrepreneur who tried a few businesses and took some chances, went through some ups and downs and turned it into ONE of south Florida’s FRESHEST Conch salad stands. The Pineapple Express Bar serves entire South Florida and soon will serve much much more. When the pineapple is out it attracts everyone who encounters it. This pineapple is an eye-pleaser everywhere it goes. My goal is to make the pineapple a landmark of Florida, more like “Florida’s Pineapple”.
Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
In the beginning, it was a challenge. I went through so many phases, being under a lot of pressure because I was a single mom. I entered a failed partnership and learned how to run a small mobile shop. So no, it wasn’t a smooth road but it wouldn’t change anything or anyway it happened.
Please tell us about your business.
The Pineapple Express Bar serves the FRESHEST Conch Salad in Florida, Tropical style. I use the freshest ingredients, from fresh vegetables to sweet fresh pineapples. The pineapple is not only known for its unique shape but it is known for the Best Conch Sauce! My proudest moment as a business is the absolute sincere love I get from my customers. Honestly, they make my day and what I do that much better. They don’t just come to buy food. They smile, they laugh, they joke, they surprise me, they look after me. What I will always love about the Pineapple is that it sets itself apart from others just by simply being a Giant Pineapple.
Do you look back particularly fondly on any memories from childhood?
I have many favorite memories because I have a huge family and grew up with many other children my age, we always had a birthday, pool party’s, baptism, or a ceremony. It was always a party.
