Today we’d like to introduce you to Fabio Caro.
Fabio, please share your story with us. How did you get to where you are today?
I was born in Colombia, outside Bogota, and emigrated to Connecticut when I was in my mid-2os. During my time living near Hartford, I opened up a restaurant that served dishes from several Latin American restaurants. It was also a passion of mine to share my culture with others, and what better way to do this than with food. When my wife and I escaped the cold and moved down to Florida, I started traveling more back to Colombia. On one trip, we visited a famous coffee region. I had started to see the specialty coffee trend growing in the United States, and felt a bit ashamed that I didn’t know much about coffee production, especially since I came from a country that is one of the largest coffee producers in the world. This sparked my interest in high quality coffee, and that’s where the idea for Macondo came from. The name comes from the Gabriel Garcia Marques’ book, 100 years of solitude. He passed away around the same time as I was opening the shop, and as I re-visited his most famous works, I thought the name was fitting.
Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Opening a new business is never easy. The first few months were the hardest. It always takes a while for the word to get around. But once people started coming in, we quickly had a crowd of regulars. In Doral, there are few small businesses – it’s a town with most chain restaurants. So something like Macondo really sticks out. But in a good way! We offer a high quality product, friendly service and a relaxing setting.
Macondo Coffee Roasters – what should we know? What do you guys do best? What sets you apart from the competition?
Macondo Coffee Roasters imports coffee grown in Colombia. We air ship our beans, ensuring the freshest possible product. We roast everything in house ourselves, and offer specialty Italian-style coffee drinks. We also serve cold brew, and even a few drinks we’ve come up with ourselves. You have to try our infused cold brew drinks. Our kitchen serves empanadas, salads, baked sandwiches and we sell homemade cakes.
We also have a weekly schedule of activities. Live music, open mice, and theater performances.
Macondo is a place to come with friends, relax, and enjoy the best cup of coffee you can get your hands on. One of our baristas recently won a local latte art contest!
What moment in your career do you look back most fondly on?
Every time a local thanks us for offering a great alternative to the big chain coffee shops, we feel proud. That’s exactly what we aim to do.
