Meet Elliot Harris of Pigsty BBQ in Boynton Beach and South Beach

Today we’d like to introduce you to Elliot Harris.

Elliot, can you briefly walk us through your story – how you started and how you got to where you are today.
Pitmaster Bryan Tyrel began his passion for food in a small rural farmhouse in Kansas where Sunday dinners were a big deal. He took the passion for food he learned from watching his mom and along with college buddy Jeff Steheny, was part of the competition BBQ team, Slaughterhouse Five, culminating with them winning the American Royal World Championship two years in a row. Bryan was the original smokehouse manager at Oklahoma Joe’s BBQ which was voted “Best BBQ restaurant in the world” by Zagat and “One of the 13 places you must eat at before you die”, by Anthony Bourdain.

Bryan then went to London and expanded the brand to 5 restaurants. He always focused on the food, making sure that the 100th slab of ribs was ready for the judges. Elliot Harris has had a successful career advising restaurants throughout the United States and has successfully launched several franchise concepts. After a chance meeting, a friendship developed. Recipes were shared and the desire to bring true cafeteria style BBQ to Florida became too good to resist. PIGSTY was born.

Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
It has been challenging to establish a business in a new market. It has also been tough to find a true team to deliver our world class competition winning BBQ consistently but we have. We have also struggled to get our location, which is in a lower end area in a nondescript strip mall, on the must stop list for foodies the from all over the company.

Alright – so let’s talk business. Tell us about Pigsty BBQ – what should we know?
World class BBQ in a family friendly comfortable environment with world class live music with musicians from national touring acts. We have also worked with our local community to bring in good kids from difficult backgrounds and teach them our business practices. We also support numerous local charities and often host charity nights for local schools and organizations

Is there a characteristic or quality that you feel is essential to success?
Tenacity and demand for consistency. Every customer needs to leave and their day was better because they shared it with us.
