Today we’d like to introduce you to Brian Mullins.
So, before we jump into specific questions about the business, why don’t you give us some details about you and your story.
Before bringing Ms. Cheezious™ to the streets of Miami in 2010, I had acquired over 25 years of experience in the culinary industry, working with some of the most prestigious brands and opening over 30 restaurants throughout North America, South America, Asia and Europe. I was raised in a Long Island gastronomic powerhouse where inspiration wafted from the kitchen each time my mother and grandmother were near the stove. Developing a deep appreciation for food at an early age, I would spend days keeping a watchful eye on the techniques my grandmother used when preparing family meals, and would take over the kitchen afterward to experiment on my own. I credit these moments as the catalyst to my career.
By age 15, I had successfully developed myself into a self-taught chef, and operations quickly became my next passion. Soon I was traveling and opening restaurants across the map, while also absorbing the culture and experiencing the food in destinations including Hong Kong, London, Hawaii, Moscow, Indonesia and Mexico.
In 2010, I was presented with an offer I couldn’t refuse: an opportunity to team up with my wife, Fatima, and friend/partner Christian to create a restaurant concept of our own. Staying true to my culinary philosophy that the most prized moments are created around good food and good people, we decided to create a menu based on the widely enjoyed grilled cheese sandwich.
Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
Anyone in the restaurant business will tell you that it is not without its challenges. Every day presents itself with new challenges. It is a 24/7 job.
Alright – so let’s talk business. Tell us about MS CHEEZIOUS – what should we know?
Ms. Cheezious is known as the place to go for the best grilled cheese sandwich. We specialize in creating fresh made and unique grilled cheese sandwiches. We have added new layers of flavor to the classic American favorite. We elevate our sandwiches by using the best ingredients available and cooking from scratch, such as smoking and curing our meats in house, which is what sets us apart. Along with our must have award winning grilled cheese, we also offer hand spun milkshakes, fries, soups, salads, chilis, mac and cheese, wings, beer and wine.
Since Ms. Cheezious™’ launch, it has become one of Miami’s most popular food truck and restaurant destinations. We have been honored to have earned a great number of rave reviews, including South Beach Wine and Food Festival People’s Choice Awards for Best Food Truck, Daily Meal’s #1 Truck in America, and numerous Miami New Times Best of Readers Choice Awards for our food trucks and restaurants. We also partnered with WISE Chips to create a limited edition flavor based on our popular MACKIN’ MELT which are out now nationally!
The Ms. Cheezious™ brand now includes 2 food trucks and two brick and mortar locations in the historic MIMO district of Miami and Coral Gables with other locations in the works.
