Meet Carlo Salvatore Raciti of Almotti Gluten Free Bakery in South West Kendall

Today we’d like to introduce you to Carlo Salvatore Raciti.

Carlo, can you briefly walk us through your story – how you started and how you got to where you are today.
I am a 3rd generation Sicilian Baker. I grew up in Viagrande, Sicily surrounded by a family of bakers and food lovers, as most Italians are! My love for baking and food began at a young age when visiting and helping at the family bakery. I remember my father bringing home the best tasting, vegetable, and fruits grown by him at our farm, and helping my mother prepare them. All natural ingredients, nutrients, and flavors have been instilled in me by my land and my family. As I grew, I decided to go into the Hospitality and Tourism Industry, were I worked at various hotels and learned many aspects of Food and Beverage sector.

In an unexpected turn of events, during a vacation in Miami, I met the love of my life, Rebecca Bechara, and decided to settle down with her, eventually having our boy, Mario Carlo and our baby girl, Lucia. With our family just starting to flourish, we soon realized the growing need that existed for freshly baked healthy treats that are reminiscent of my Italian roots and traditions. This is when we realized that I wanted to return to my roots and expand my culinary skills and knowledge. We moved to Italy so I could seek professional schooling at Chef’s Academy in Italy and train with experienced Italian and international chefs.

Soon after our return to Miami, Almotti was born, in the summer of 2014 out of our garage, when I would bake to all our family and friends, the creations that I had developed by my experiences in Italy. We wanted to expand our customers, so we moved our production to a commissary share kitchen, began attending and selling at local farmer’s markets, events and to small business. A few years after, our gluten free, all natural Old-fashioned Almond Macaroons had been very well accepted by our community and we needed/wanted to continue our growth. Rebecca and I moved Almotti production’s into our own Gluten Free facility in Southwest Kendall, were I have been able to continue to expand Almotti’s line of products. Now, Almotti is a gluten free baked goods company that specializes in Southern Italian handcrafted gourmet delicacies proudly serving the Miami Market.

Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
We have been very blessed that our products have been accepted so well in our community, but our biggest challenge was how we expand our reach to all of South Florida market. This is when we started focusing more on our website and social media advertising as well as larger wholesale accounts. Which we are still working very hard to ensure that we can reach more customers. The food industry is very difficult because is ever changing and very trendy, we use many classic techniques, all natural, high quality ingredients that we are consistently trying to market in new ways. Rebecca and I love a challenge and work well under pressure, so we will continue to find ways to grow our business.

Alright – so let’s talk business. Tell us about Almotti Gluten Free Bakery – what should we know?
Almotti is a gluten free baked goods company based in Miami, Florida, founded and operated by me, Pastry Chef Carlo Raciti and my wife Rebecca Bechara. We specialize in Southern Italian handcrafted gourmet delicacies. We are best known for our Old-fashioned Italian macaroons, cookies, artisan cakes, spreads, and gifting options. We take pride in quality craftsmanship and carefully choose the best all-natural ingredients for our products; we will never use hydrogenated fats or anything artificial. In order to preserve quality, we bake and produce our products in small batches every week.

What we are most proud of and what differentiates us from our competitors is our ability to continue our mission of providing high quality, gluten, preservative free, and artisan baked goods, while at the same time providing the best service possible to our customers.

Any shoutouts? Who else deserves credit in this story – who has played a meaningful role?
If it was not for my beautiful wife Rebecca Bechara, Almotti would not even exist. She is the heart of the business, the captain of the boat. She leads all of us to the right direction with her experience in sales management and operations. Her background in sales ensures that our customers receive the best customer service. She as well as our family (parents, siblings, and our children) have been my biggest supporters and motivation to succeed.
