Meet Nicolas Legrand of Oliver’s Bistro

Today we’d like to introduce you to Nicolas Legrand.

Nicolas, can you briefly walk us through your story – how you started and how you got to where you are today.
I have been working in the restaurant industry for almost 20 years.

I grew up with my parents in France in their own restaurant. My father was a “boucher.”

I finally decided to move to England and then in the US to have an international experience.

After that, I opened my own restaurant in France with my wife and after 5 years, we decided to live our dream and move with our 2 kids in the US.

We found investors to open our restaurant on the beach.

We bought Oliver’s Bistro after 12 years being run by a German guy who is very nice and very professional. He built this business and made an institution on the beach with fair price, friendly service, and an amazing tropical patio.

Chef Ed has been working here for 10 years and he is generous in his work.

Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
It has been a smooth road.

Alright – so let’s talk business. Tell us about Oliver’s Bistro – what should we know?
Oliver’s Bistro has been running for 15 years on the beach with fair price, friendly service, and an amazing tropical patio in the corner. It’s a neighborhood restaurant that is open every day, all year long, from breakfast to dinner.

Never closed, and always with a regular homemade food. It’s American food, with some European and Latin specialty.

But the best of the best is the BRUNCH served every Saturdays and Sundays with a choice of eggs and pancakes which is extremely famous on the beach.
