Meet Anna Addario and Gisela Rubertelli of Must Pasta

Today we’d like to introduce you to Anna Addario and Gisela Rubertelli.

Anna and Gisela, can you briefly walk us through your story – how you started and how you got to where you are today.
We are Gisela Rubertelli and Anna Addario, Italian origins and trained by traditional Nonnas. We loved traditional pasta, but lately, we were eating less and less due to its high content of carbs and very low protein and fiber. We had to do something about it, so we started working and discovered the plant-based healthy pasta trend.

With this in mind, we decided to reinvent our traditional homemade pasta made with semolina, wheat flour, and eggs. Our goal was to create pasta we could eat every day: healthy and nutritional, no guilt! The original Nonna recipes and secret sauces became our benchmark: In essence, we aimed to create a healthy pasta from scratch but also truly Italian. That’s how Must Pasta came about. Many trials and many errors later and after hundreds of failed tests, Must pasta was born.

Must pasta is made with our own handmade freshly ground Chickpea Flour secret recipe and carefully selected healthy ingredients. The result? A delicious plant-based artisan pasta high in protein and fiber, low in carbs. All our ingredients are no-GMO, vegan, zero preservatives, and gluten-free. The same standards apply to our 100% natural freshly squeezed tomato handmade pasta sauce.

Has it been a smooth road?
Our main challenge was to make a healthy pasta that had good, consistency tasted good, and had good color. The regular pasta contains wheat flour and eggs to give the traditional pasta consistency. However, we wanted our pasta to be gluten-free and vegan, so we couldn’t use these ingredients to give our healthy pasta consistency.

Then, we found out that the plant-based ingredients that we selected to substitute the wheat flour and eggs gave a different taste and color to the pasta. However, our goal was very well defined: we wanted our pasta to be healthy but also to have good consistency, taste, and color. So, after many tests, 130 tests to be exact, we got to the right ingredients that met our goal.

Our company, Must Pasta, is an artisan, homemade, handcrafted, Miami local, high in protein & fiber and low in carbs pasta. We also make our own healthy souces to accompany our healthy pasta.
