Meet Anna Rasuly of Atmosphere Patisserie in Hollywood

Today we’d like to introduce you to Anna Rasuly.

Anna, can you briefly walk us through your story – how you started and how you got to where you are today.
It all started in 2013, I was I my military career In the IDF, which was actually super fun and I saw myself doing that for the rest of my life. But, and there’s a big but, I always felt that I am missing something, some passion that hides deep inside that I need to fulfill! That’s when I started to get more and more interested in baking. I found that one of the most known and respected school for baking was actually in Israel and they had really good programs, the name of the school is “ESTELLA”.

With my military career I still decided to took the best classes that the school had to offer and started six months of intense program, which included internship in France, that was one of the most exciting experiences, by end of the six months studies I took a leave of absence from the military and got straight to my internship at “Ecole international de Patisserie – Olivier Bajard” in France. Once I finished the study and got my diploma It took exactly six months to quit my military career and start a new page in my life, and that how “Atmosphere Patisserie” was born.

Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
Once I finished my studies, me and my husband started to look to open a bakery and to take it to the next level, we decided to move to a new country, that can help me to innovate and to introduce something new and different, that was the biggest challenge, the decision was between Canada, Australia, and USA, and the final decision was Florida, the sunshine state, the happy place 🙂

I started everything from scratch, looking for bakery supplies, trying new ingredients and starting to create my sweet roller coaster. It sounds fun but it was extremely hard, some of the ingredients wasn’t the same, some others wasn’t as high quality as I wanted, up until now I’m always learning more. The final step was to find a place that I can start selling and introducing myself, that’s when we found this place called “Yellow green farmers market ” in Hollywood Fl. Great market for makers, and small businesses, I just felt that this is the right place to start, and I opened my own booth in March 2017.

Please tell us about Atmosphere Patisserie.
I started with cookies, yes simple as that sounds, from four types I grow up to 14 types. Seasonal flavors every season, new designs for every season, but most importantly the flavors, the old fashioned flavors with a twist that remind you of your grandmother! The bakery was built on the idea to take cookies from many countries and to place them in one small bakery, and that what you can find in Atmosphere, cookies from France, Italy, South America, Australia and more. On my extra time, I started to create more desserts, from cakes to mousse desserts, to new trends that amazing bakers all over the world create. Today you can find cakes, tart cakes, cakepops, cakesicles, mousse cups, chocolate covered strawberries, cookies and always getting inspiration to make more. As a small business owner, it’s the most important thing for me to give my clients the best service, from a small birthday cake to a special celebration, like weddings, baby showers, and more. Building special dessert menu for each and one of my clients.

If you had to go back in time and start over, would you have done anything differently?
I’m not sure I would have done something different, the whole road was not easy but it’s made me- me, and my bakery Atmosphere Patisserie what it’s today 🙂
