We recently had the chance to connect with Manami Kumagai and have shared our conversation below.

Manami, so good to connect and we’re excited to share your story and insights with our audience. There’s a ton to learn from your story, but let’s start with a warm up before we get into the heart of the interview. Are you walking a path—or wandering?
Right now, I find myself navigating an uncertain but transformative path. After moving out of my previous workspace, I’ve faced ongoing challenges—most notably, the lack of adequate space for baking and the difficulty of coordinating pop-up events around a demanding school schedule. It’s a period of adjustment, filled with both frustration and reflection, as I work to realign my passion for baking with the realities of my current circumstances.

Can you briefly introduce yourself and share what makes you or your brand unique?
I’m the proud owner of Mana’s, a home-based Japanese bakery dedicated to bringing both traditional and inventive Japanese breads and pastries to my local community. I launched the bakery in 2019, shortly after moving from Japan to Texas, with the goal of sharing the comforting flavors and craftsmanship of Japanese baking. What began as a small, homegrown venture has grown into a heartfelt pursuit—one fueled by an unwavering passion for creating fresh, delicious baked goods that connect people through flavor, nostalgia, and creativity. From fluffy melon pan to playful matcha treats, each item I bake is a blend of cultural heritage and personal expression.

Thanks for sharing that. Would love to go back in time and hear about how your past might have impacted who you are today. Who taught you the most about work?
Without a doubt, my greatest inspiration has been my grandfather, who also ran his own home-based business. Growing up, I had the privilege of watching him work—carefully managing his time, staying dedicated to the quality of his products, and building genuine relationships with his customers. His commitment and quiet discipline left a lasting impression on me.

What fear has held you back the most in your life?
Saying goodbye to loved ones has always been one of the most painful experiences for me. Whether it was the end of a marriage, the fading of meaningful relationships, or the deep loss of my grandfather—each farewell left a mark on my heart. My grandfather’s passing, in particular, was incredibly difficult; he was not only family but also a guiding force in my life and work. These moments of loss have shaped me in ways I didn’t expect, making me more sensitive to impermanence. For a long time, I tried to avoid goodbyes altogether, clinging tightly to people and places. But over time, I’ve begun to understand that grief and growth often go hand in hand—that even in the heartbreak, there’s room for resilience and new beginnings.

I think our readers would appreciate hearing more about your values and what you think matters in life and career, etc. So our next question is along those lines. What are the biggest lies your industry tells itself?
The idea that Japanese bread is always simple and low in calories might just be one of the biggest misconceptions out there. While the delicate appearance and soft texture might suggest otherwise, many Japanese baked goods are surprisingly indulgent. Take souzai-pan, for example—savory breads stuffed with hearty fillings like deep-fried chicken, creamy croquettes, or even stir-fried yakisoba noodles. Yes, noodles inside bread! They’re incredibly satisfying and undeniably delicious, but let’s be honest—they’re far from diet food. Japanese bakeries may look minimalistic on the outside, but what’s inside often packs a flavorful (and caloric) punch that’s worth every bite.

Okay, so before we go, let’s tackle one more area. If you knew you had 10 years left, what would you stop doing immediately?
