Meet Robert Schwartz

Today we’d like to introduce you to Robert Schwartz.

Thanks for sharing your story with us Robert. So, let’s start at the beginning and we can move on from there.
I’ve always had a love for food. Being born in Miami and grew up in the islands I’ve developed a taste for island flavors. In 1990 I decided to enroll in the culinary arts program at the Baltimore international culinary college and pursue my chef career. After graduating school I worked all line positions in the kitchen and worked my way up from cook, sous chef, executive chef to corporate chef. I’ve worked and learned from top chefs in fine dining to major corporations. Now being back living in Miami ” A heavy latin city” my taste has developed for a mix of new flavor combinations.

So, in 2018 we started to develop our food truck menu and by August 2019 we were up and running with our new truck. It’s been full steam ahead ever since. We’ve already won a food competition award in this short time and have been well received by the foodie community.

Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
It’s been a tough road starting a new food truck business. I’m used to running kitchens but not much on the admin side of the business. We also had to learn some hard lessons right from the beginning of our venture such as having enough working capital, finding locations, small scale procurement, licensing and paying taxes.

Please tell us about your business.
We’re a food truck from Miami with a fusion of Latin and Caribbean cuisine. We specialize in Toston burgers and bowls. We’re most proud of our quality and fresh food being served from a food truck with local flavors that our South Florida foodies are craving.

If you had to go back in time and start over, would you have done anything differently?
We would have started with more working capital. This can make or break a company in a short time frame.
