Hi Raul and Jose, we’d love for you to start by introducing yourself.
All our lives we have had the blood of entrepreneurs and in a period of scarcity that we were going through the idea arose to join forces to create something incredible like CHILELIMONFUSION, I, Raúl Chávez, lover of cooking and my roots, a tradition inherited from my parents. lifelong hoteliers in Mexico and my partner José with a master’s degree in brand management and businessman with a family heritage. We joined forces and decided to start in one of the most famous markets in Hollywood called Yellow Green Farmers Market. We started with very little investment where we now have more than 20 sections within the market and a complete restaurant in the city of Hollywood near Down Town.
Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
We believe that no easy path is the right one, the true reward is found at the end of the challenges, starting a country that is pleasant to our own and in a culture different from ours has been difficult, but really the most difficult thing has been growing as people, entrepreneurs and partners, the challenges and competition have always been with ourselves, always seeking to be better than the day before and improve our processes in the restaurant.
As you know, we’re big fans of Chilelimon Fusion. For our readers who might not be as familiar what can you tell them about the brand?
Our company is located in the food area, specifically in the restaurant area, the restaurant is called CHILELIMON FUSION, we are a Mexican Peruvian Fusion food restaurant, we firmly believe that the true flavors of our ancestors should be brought, it is everyone’s right to be able to taste traditional Peruvian Mexican food, we also bet on a family place where everyone is welcome, adult children, grandparents and our pets too, in addition the experience is part of our menu, once you enter our restaurant you may change your name to a character from CHAVO DEL 8 or some Peruvian series, you will also find hopscotch and traditional games so that children leave their tables aside and concentrate on living the experience like in the old days.
What quality or characteristic do you feel is most important to your success?
Discipline and patience, I believe these two are the key to the success of any entrepreneur who loves what they do and is passionate about their craft.
