

Today we’d like to introduce you to Paul Niedermann.
So, before we jump into specific questions about the business, why don’t you give us some details about you and your story.
Born and raised in Cooper City, Florida, I moved to Miami to attend Johnson & Wales University, Durning my time in school and after graduation I worked for some of the best chefs in South Florida and was an opening team chef of the St Regis Hotel ( now Ritz Carlton) Ft Lauderdale. In 2011 I decided to put my skills to the test and was the season 9 winner of the Fox cooking competition Hell’s Kitchen. With that win my prize was the be the Head Chef of BLT Steak in N.Y.C. In 2013 I was named the Executive Chef of BLT Steak L.A., as well as BLT Prime in Doral FL. In 2017 I joined SALT7 Restaurant Group as the Corporate Executive Chef. With that, I oversee all culinary operations as well as oversee all new expansions, including our new SALT7 location in Ft. Lauderdale slated to open in early 2020.
We’re always bombarded by how great it is to pursue your passion, etc – but we’ve spoken with enough people to know that it’s not always easy. Overall, would you say things have been easy for you?
The path that my career took had its bumps along the way. I can’t say that it was always the easiest, There has been a lot of sacrifice that I have had to make to get where I am today, but I wouldn’t change it for the world.
So let’s switch gears a bit and go into the SALT7 story. Tell us more about the business.
My job is to over see all culinary operations in the restaurant group. Staff training, menu development, execution of services and overseeing of construction of new projects are just a few things in my day to day. My cooking style is refined approaches on classic fares, I like to think outside the box and bring things to the guest that they have had before in there life, but with a brand new view on it. What I’m most proud of being part of the group is that we do set us apart from the pack, we are always pushing the envelope to better our guest experience be it with our food, our entertainment, or our atmosphere. We are truly unique.
So, what should we be on the lookout for, what’s next in store for you?
Future plans are to get our second location up and operational. Then we would like to start looking into shaping new and different concepts for our brand.
