Thanks for sharing your story with us Kimmi. So, let’s start at the beginning and we can move on from there.
Food wasn’t always the center of my life and especially not nutrition. I grew up with very humble beginnings; our family couldn’t really afford food, so my mom grew most of our food in the backyard. Growing up in the 80’s when packaged foods were the norm, I sort of felt like an outcast bringing produce from my backyard to lunch. Most of the time, my mom packed vegetables, fruits, and herbs for lunch.
I grew up, went to college, then pharmacy school – always rejecting a healthy lifestyle and gravitating towards convenient foods, and of course, those late-night snacks that tend not to be very healthy. This lifestyle of convenience continued into the decisions I made, and most of them were poor choices as it related to my health. A combination of a very demanding work life with unhealthy habits created the perfect storm for a myriad of health issues. The biggest health shock was getting diagnosed with an autoimmune condition called Hashimoto’s.
When traditional medicine tells you there isn’t much they can do except monitor the progression of the disease and the pill that you take won’t “fix” the thyroid but only alleviate some symptoms, and with age, things will only get worse – it can leave you feeling hopeless. That is where my healing journey began, seeking out experts everywhere and inquiring about alternative things I could do.
The advice that kept getting repeated over and over was regarding the food choices I was making. We all have a food story, and mine took me full circle from eating the way my mom taught me to eat to now realizing she was wise to tell me always to try to eat local, fresh and organic when possible. That is the one thing that has made the most significant impact on my health, and this is why I created Juicery Rx. I wanted to create a place where we were transparent with what ingredients were used in all of our products as well as choosing the highest quality produce we could find.
Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
There is nothing easy when it comes to opening a restaurant. From delay in construction to unforeseen costs, it is incredibly stressful before the doors are even open. When we finally did open the doors, we miscalculated a few things such as the flow, some of our dishes took longer to make than we expected, lack of staff and training material and our inventory was always off. We spent the first month reconfiguring our business model.
Juicery Rx – what should we know? What do you guys do best? What sets you apart from the competition?
Juicery Rx represents an integrated lifestyle that goes far beyond juices and food. We are your “prescription” for health. We want to change the journey towards not just living longer but better, and to ensure a healthier tomorrow. What we eat and drink can influence how our genes behave, known as our genetic expression. There is an important link between the quality of food consumed and the quality of our lives. Food should make us feel good; it should benefit us and the world around us.
What we choose to consume today can have subtle influences on health, but they can be powerful when repeated over the lifespan. I educate team members on brand and product knowledge as well as menu development. I am a pharmacist by trade with nutrition certifications. We are proud of how many people we have helped to feel better, gain more energy, and, most importantly, just bring awareness of why health matters. What sets us apart from everyone else is because we are a pharmacist chef team when it comes to product and menu development.

The success of Juicery Rx is because of our team, their hard work, and dedication to bringing forth their best to grow the brand. Chad Stultz, my husband, is my biggest cheerleader. There is nothing more valuable than someone that listens to your crazy ideas and lets you run with them. Craig Young, my business partner, the one that always takes me out of my comfort zone, and even when I am kicking and screaming every step of the way, I am a better person because of it. Chef Phil Kahn brings my culinary dreams into reality with his beautiful dishes. I throw a bunch of healthy ingredients at him and he is able to create something really tasteful from the list.
Most importantly the “guests” that come into Juicery Rx. The culture and environment we wanted to create is a space for people to come in and share with us their food story and for us to provide nutrient-dense products that not only taste great but makes them feel great. There is nothing better in the world than when we get feedback that we helped someone feel better or that they are eating healthy now because we made it easy for them. There have been many times I have wanted to throw in the towel and somehow someone comes along and tells me how we have helped them change their lives, and it’s a reminder of why we are doing what we do.
