Meet Jose Marmol of Inedit Gourmet

Today we’d like to introduce you to Jose Marmol.

Jose, let’s start with your story. We’d love to hear how you got started and how the journey has been so far.
Born and raised Venezuelan, I moved to Barcelona (Spain) in my mid-twenties to follow my dream of becoming a Chef. I graduated from culinary school in Sant Pol de Mar (Catalonia, Spain), worked a couple of years in la Costa Brava and moved back to Caracas (Venezuela) to start my own business, Pret a Porter Gourmet. After almost 5 years of a successful career as a caterer in Caracas, with gorgeous culinary experiences with top chefs of the region (such as Sabor e Saber – Bello Horizonte, Brazil) I felt in love with one of my best friend’s sister who happened to be an American citizen, and moved to Tampa (Florida) with her to start this adventure called Inedit Gourmet. It all started from a studio-sized student apartment in Tampa, when I used to drive back and forth to Miami to perform private dinners (wine & food pairing menus) to groups of friends and family. Somehow the word started to flow and more clients and new people were interested in what I was trying to accomplish. We moved to Miami and Inedit got its first proper commercial kitchen. Almost 7 years have gone by since that moment, a couple of thousand clients that had been successfully served, and lots of ups and downs that had built what Inedit is right now, a well-organized and professional Catering company, with a fabulous menu that strives to provide the best food and services to its customers.

Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
I wouldn’t believe anyone in this business talking about a smooth road. Being a Chef not only is a synonym of inhuman amount of working hours at the lowest possible pay rate, but also a lot of deceptions and failure before any success is really accomplished. The thing is that we (our race, chefs) love that struggle, we feed ourselves with it, and everything rounds up and gains meaning when you find out people is loving what you do.

I’ve lost money, have argued with important clients (and lost some of them for good), I’ve missed some important family time, lost track of some loved friends, spent less time with my wife and twin toddlers than desired, etc… But I don’t regret any single step I’ve walked, and feel proud of everything I’ve accomplished to this day.

Please tell us about Inedit Gourmet.
Inedit Gourmet (in Catalan) is a synonym for unique, one and only, and made uniquely for each client. That is something that definitely separate us from all other Catering companies with whom you, as a client, would have to stick with their prefixed packages.

With a fusion of old school and modern cooking techniques that combine Asian, European, and Latin American flavors, Inedit Gourmet is proud to please even the most demanding and educated palates using the best quality ingredients.

Do you look back particularly fondly on any memories from childhood?
Being surprised by whatever was inside my lunchbox. Then, when I got back home from school, sticking my nose and fingers inside every single pot and pan that was being used in my family’s home kitchen.
