Hi Gabriella & Aubrey, thanks for sharing your story with us. To start, maybe you can tell our readers some of your backstory.
We started Sobremesa from something we both love.
Gaby was born in Miami but grew up in Mexico city and Aubrey is from London: We both met while living in Barcelona, which probably tells you a lot about how wine ended up at the center of our lives.
We both came up through hospitality working in restaurants / bars, and in Gaby’s case, a detour through fashion design so we understood from the inside how much a good bottle of wine can shape an experience.
We both dreamed of one day having a space where we could pour everything we loved into one place (wine, travel, food, music, the art of a well set table), and the kind of evenings that stretch long because nobody wants to leave.
Opening a shop felt like the most natural expression of that. We wanted Sobremesa to be the kind of place you stop into after a long day at work to buy a bottle to take home and unwind with something delicious or on a Saturday before you host dinner, we wanted it to be used in peoples everyday life the way you’d visit your local butcher or bakery.
Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
It hasn’t always been smooth. Building a community from scratch is slow, quiet work and there were stretches where we had to trust the process and get people to trust us. You open the doors, you curate carefully, you show up with intention, and hope people see that.
We have been showing up every day, and now we turn five in August, and that feels like a milestone.
Thanks – so what else should our readers know about Sobremesa?
Sobremesa is a boutique wine shop; meaning we carry wines from small, independent producers who farm organically or biodynamically and work with little to no intervention in the cellar. No big commercial label. Every bottle on our shelves is there because we believe in it.
Someone once described Sobremesa as our own personal cellar, and that’s probably the most accurate thing anyone has ever said about us. We are constantly exploring, constantly tasting, constantly bringing in something new. The shelves evolve because we do. Our non-negotiables are organic or biodynamic farming, small producers, and minimal to 0 intervention in the cellar. We want wines that taste like somewhere and have soul
Our shop is minimal but deeply intentional. Natural wood, warm light, fresh flowers, always music. It feels like an extension of who we are, because it is. We want the focus to be on the wine, and everything else steps back to let that happen.
Every Saturday we host drop in tastings from 4pm-7pm, four wines for $25, no reservation needed. It can get loud. It’s meant to. Think a corner spot somewhere in the Mediterranean where people linger, discover, and talk to strangers.
We also have a wine club with two tiers. The Table Club ($60/month) is built for everyday drinking and sharing, wines that are ready to open tonight. The Cellar Club ($120/month) is for more complex bottles that reward patience and can also benefit from aging. Both tiers receive 10% off in store and you can join through our website.
What we’re most proud of is the regulars, The people who come in not knowing much about wine and leave excited. The ones who come back. Relationships we have made and the trust people have given us. We’ve worked hard to create a space with no snobbery and no intimidation, just good wine and an honest conversation. Whatever level you’re at in your wine journey, you’re welcome here. We’re not here to impress you. We’re here to share something beautiful with you.

Miami is a city with enormous potential. We came from places with deep food and wine cultures, cities where independent shops and restaurants are woven into daily life, and we believe Miami is moving in that direction. We chose to be part of that.
What we’d love to see grow is a stronger instinct to seek out quality over convenience, to support the independent businesses that are genuinely trying to add something to this city. Every time someone chooses a place like Sobremesa over the easier option, they are helping shape the kind of city Miami can be. One where you can always walk out your door and find a great bottle of wine, a good meal, an independent shop worth lingering in… A culture that slows down enough to enjoy what’s right in front of it. Miami has the soul for it. and we’re glad we’re here.
