Today we’d like to introduce you to Camila Ramos.
Camila, can you briefly walk us through your story – how you started and how you got to where you are today.
I’ve worked in coffee and hospitality for over 10 years. My first coffee shop job was in college at Volta (Gainesville, FL), after which I had various food and beverage jobs, including managing a locally-driven breakfast spot, The Jones (Gainesville, FL), and bartending at restaurants like The Forge (Miami) and Makoto (Miami). Later, I worked at a specialty coffee roaster and retailer, Panther Coffee (Miami), which is where my career in coffee really took off. I worked my way up from a barista to director of retail, while representing the company in regional and national competitions, where I ranked first and firth in, respectively.
From early on in my career, I knew I wanted to have a cafe or restaurant, and I was careful about where I worked, always with the intention of learning as much as possible and doing the very best I could. The opportunity to open my own café came up, and although I had turned down offers in the past, I was really excited to work with Chris MacLeod, who is now my partner in the project. The rest is history!
Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
Other than some unforeseen big life changes — like having a baby — it’s been a wonderful experience. I wouldn’t say we’ve had many experiences that have been too far from what’s normal in our industry, which isn’t saying too much since it’s known for steep ups and downs. Also, new ventures are, by nature, not particularly smooth.

We’re known for our coffee and breakfast, which we pride ourselves in executing as deliciously and consistently as possible. Our commitment to quality, having a happy and purposeful team, and to bring good onto our community is what sets us apart from other places. We’re constantly searching to do our best and improve, and we have a super strong team!
If you had to go back in time and start over, would you have done anything differently?
I’m glad things happened as they did. We’re learning each day, and it’s a nice thing to experience.
