Meet Baker and Barista

Today we’d like to introduce you to Baker and Barista. They and their team shared their story with us below:

Clara Baio

Baker Clara Baio experienced the true Italian culture of baking alongside her grandparents at a very young age in their local Sicilian bakery. From bread loaves to focaccias to warm freshly baked pastries, Clara quickly learned what would eventually become her passion. After moving to the United States, Clara worked multiple trades. Starting from her home kitchen, Clara soon began dedicating her time to her future journey of operating a storefront Bakery.

Barista Antonija Atanasova’s journey started at a young age in Macedonia, her native country. Falling in love with coffee, she continued to pursue her passion once moving to the United States, becoming a well-known staple in some of the most popular coffee shops. Antonija expanded her knowledge by working alongside some of the most complex espresso machines, grinders, and brewers. Offering her Barista training skills to others and developing her coffee knowledge, she began pursuing her dream of opening a coffee shop.

We all face challenges, but looking back would you describe it as a relatively smooth road?
Upon receiving the keys to what would turn our dream true, we couldn’t believe the project was finally beginning. We faced the challenge of turning the space from a former Steakhouse to our dream Bakery. Although having a vision for the space we had many struggles turning this into a reality. Unable to meet the opening deadline was a major struggle. We continued to take things day by day trying to keep positive throughout the journey, which in turn led to a smoother road.

Alright, so let’s switch gears a bit and talk business. What should we know about your work?
We are both very passionate about what we do. Our main mission is to provide excellent products to every customer. We wanted to create a space where you could find both a delicious cup of coffee and a baked good while having an atmosphere full of good and calming vibes.

We believe what sets us apart is the quality and taste of both the pastry and the coffee as well as our Country Wheat Sourdough Bread. Often times we get asked, “Do you bake everything here in this small kitchen?”. Not owning any freezers and baking everything in house makes us unique. It takes a lot of strong will to wake up to bake fresh at 3:30 am every morning to ensure the product is special or to dial a coffee grinder to make sure the beans are ground to perfection. What we wanted to create was something that was hard for both of us to find in Miami, true quality products.

What matters most to you? Why?
The positive feedback from each of our customers. It keeps us motivated.
