Today we’d like to introduce you to Alice Pandolfi.

Hi Alice, can you start by introducing yourself? We’d love to learn more about how you got to where you are today?
My name is Alice I’m an Italian woman, mum and passionate about pastry, the idea of “The Organic Bakery Miami ” was born when I was pregnant of my daughter Victoria four years ago, during that time I was craving sweets but I was intolerant to dairy products and gluten, so I decided to start baking some secret recipes that my grandmother shared with me, simple tasty and healthy at the same time.

Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
it was a smooth start for me cause I thought big but I started small, At the beginning I only baked for my friends and neighbors but after a while the people order my products and because at that time it was rare to find gluten free dairy free and sugar free home made goods and I immediately become little popular in my circle of friends, it was at that moment that I started to think the bakery as a business.. I made all the steps very slowly starting to open an Instagram page, posting nice pictures of my products but first of all try to understand what the people like and try to encourage them to eat healthy but tasty. and when you want to be a model for others it’s very important to be a good role model yourself and to do so as regularly as possible.

Thanks for sharing that. So, maybe next you can tell us a bit more about your work?
I consider myself more creative than logical, even if baking needs to make calculations, if you make mistakes on quantity, the dessert is not coming out from the oven perfect. baking is like chemistry. I ‘ve always enjoyed baking when I was young, I used to sit with my mum and my grandmother in the kitchen preparing cakes, they taught me a lot, some secrets I will never share with anyone 🙂 but because I challenge myself, I wanted to bake something gluten, dairy and sugar free I had to study a lot, practicing on the recipes and working with different ingredients to find the right and the best result. I attended 60 hours of Gluten free baking course in Rome Italy at the Culinary Institute of Rome, where I really learn many things.

Can you share something surprising about yourself?
I eat my desserts every single day in moderation, I work out of course but I’m in shape and thank God I’m still skinny and healthy.
