Inspiring Conversations with Jeff Bud of Apocalypse BBQ

Today we’d like to introduce you to Jeff Bud.

Hi Jeff, please kick things off for us with an introduction to yourself and your story.
When the Covid-19 pandemic hit, I suddenly found myself without work. I wasn’t really sure what to do with myself and needed to find a way to fill up my time. I was getting ready to run some errands one day when I had a thought as I was stepping out of the house – “Fuck the apocalypse, let’s BBQ!”

Immediately I ran into the house and made the @apocalypsebbq IG handle. Registered the domain and started calling my friends. The first week we sold two racks of ribs. The next five. The next ten and it just kept growing from there. Thankfully my wife, Laura, and her mother, Aida, were up for the challenge and joined me on this crazy ride!

Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
Apocalypse has been fortunate to experience a relatively smooth road, not to say we haven’t faced challenges along the way. The most difficult has been keeping up with the demand. The pandemic has produced a series of shortages in the meat industry, often making it difficult to source the ingredients necessary to produce exceptional BBQ.

We’ve been impressed with Apocalypse BBQ, but for folks who might not be as familiar, what can you share with them about what you do and what sets you apart from others?
Apocalypse BBQ is a craft BBQ pop-up born in the heart of Miami, FL. We started off making ribs in our backyard and quickly realized we had a unique opportunity – to define the flavors and style of Miami BBQ. Our home town, our pride and joy. We set out to incorporate key elements of our cities culture into our food. Our first take was Guava Lava sauce. We infused our house-made OG BBQ Sauce with guava, mango, and habanero peppers to create a flavor experience unlike anything in BBQ. Sweet, spicy, tangy, and savory all in one bite. We knew that wasn’t enough and followed up with our Cafecito Dino Rib. A beef rib generously dusted in our homemade coffee rub and finished with Oro Negro sauce, a colada-infused BBQ sauce that’s a real jolt of flavor. The idea behind our Cafecito rib was to incorporate one of Miami’s most defining characteristics, Coffee. We wanted to bring people together the same way that magical white foam cup does.

We’re proud of our Miami flare and love representing our culture and our city in the food we so passionately love to make. Our hope is that everyone has a chance to experience our BBQ; from our, Pork Belly Burnt Ends to our Texas Style Brisket, we know we have something everyone will love.

Is there a quality that you most attribute to your success?
Authenticity, dedication and passion. We believe that by being Authentic in what we do, and never cutting corners, that by dedicating ourselves to providing excellent service and quality, and passionately approaching each day as a new opportunity to share our bbq. We will continue to grow and be able to serve our community for many years to come.
