Carolina, we appreciate you taking the time to share your story with us today. Where does your story begin?
My journey really began from a deep desire to help people heal their relationship with food and themselves. As a Registered Dietitian, I saw so many people struggling not just with what to eat, but with guilt, confusion, and a sense of disconnection from their own bodies. I knew I wanted to create something that went beyond nutrition plans something that addressed the whole person.
That’s how Totum Nutrition & Wellness was born. “Totum” comes from the Latin word for “whole,” which perfectly captures our philosophy health isn’t just about food; it’s about your habits, sleep, mindset, emotions, and the way you treat yourself.
When I first started, it was just me, my laptop, and a vision to make personalized nutrition care more accessible. Over time, Totum grew into a virtual practice with a compassionate team of dietitians serving a diverse community, especially the Latino population. We focus on medical nutrition therapy, mindful eating, and helping people build a healthier, more sustainable relationship with food.
It hasn’t always been easy entrepreneurship rarely is but every challenge has shaped me into a stronger, more grounded leader. Seeing our patients transform their health and confidence reminds me daily why I started: to empower people to take control of their well-being and feel at home in their bodies again.
Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
It definitely hasn’t been a smooth road but I think that’s what makes the journey meaningful. Building Totum Nutrition from the ground up while being a single mom came with plenty of challenges. There were moments of doubt, long nights figuring out systems, insurance credentialing delays, and all the behind-the-scenes work that no one really prepares you for when you start a business.
One of the biggest struggles was learning to balance it all being a mom, a clinician, and an entrepreneur. There’s a lot of sacrifice that goes into creating something from nothing. But I always reminded myself why I started to make nutrition care accessible, compassionate, and truly personalized.
Every setback taught me something valuable about resilience, leadership, and trusting the process. I’ve learned that growth happens in the uncomfortable moments, and that staying grounded in your mission is what helps you push through the hard days.

We’d love to hear about any fond memories you have from when you were growing up?
I grew up in Miami, Florida. I loved being outdoors riding my bike, dancing, playing soccer, going to the beach and the pool. I was always active and full of energy. Some of my fondest memories are from the times I spent in Colombia, where my family is from. We would visit the fincas countryside homes surrounded by nature and farm animals and I absolutely loved it.
I can still remember running around with my cousins, picking fresh mangoes and oranges straight from the trees, and the smell of burning wood from meals cooked over an open fire. Those moments were simple but magical filled with laughter, family, and connection.
Looking back, those experiences shaped so much of who I am today. My love for nature, wellness, and mindful living all trace back to those memories. They remind me to stay grounded, to appreciate the earth, and to live with gratitude. If I could tell my younger self one thing, it would be to cherish every second because those moments are the roots of everything I’ve become.
