Daily Inspiration: Meet Carolina Montoya Pelaez

Today we’d like to introduce you to Carolina Montoya Pelaez.

Hi Carolina, please kick things off for us with an introduction to yourself and your story.
When I used to watch my favorite shows on the Food Network, I realized how I could combine my architectural background with my culinary skills and turn them into a UNIQUE edible piece. I felt that by bringing these two creative worlds together, I could create an unforgettable piece of art that would delight my friends, family, and people in general. It was from this feeling that Unique Designer’s Cake was born.

But the story truly began in 2008, during a difficult time that changed the direction of my life. The economic Housing crisis led to the loss of my job as an architectural scale model maker. After years of developing my skills in architecture, precision, design, and craftsmanship, I suddenly found myself at a crossroads. Instead of seeing the loss of my job as the end of my professional path, I decided to reinvent myself by taking everything I had learned and applying my talents to a completely different industry.

My experience as an architectural model maker had taught me how to transform ideas into three-dimensional creations, paying extraordinary attention to scale, proportion, structure, texture, and detail. At the same time, I had always been a kitchen enthusiast and a true fan of exceptional culinary creations. I began to imagine something that could bring both worlds together: edible scale models.

That idea became the foundation of Unique Designer’s Cake.

I went through the evolution of being an architect specialized in scale models, a passionate kitchen enthusiast, and a lover of the best culinary delights to becoming a cake designer and baker. What started as a reinvention during one of the most challenging moments of my career became an opportunity to create something truly unique.

Because of my extensive experience as a scale model maker, we are able to bring to our cakes a level of precision and attention to detail that is rarely seen anywhere else. We don’t simply decorate cakes; we design and construct edible works of art. Every element is carefully planned, shaped, proportioned, and crafted to transform an idea into a three-dimensional experience that can be admired, remembered, and, ultimately, enjoyed.

When people see our cakes, full of color, vibrancy, and warmth, there is a contagious energy that fills the room. The attention to detail speaks for itself, and people recognize the difference. It is this combination of architecture, craftsmanship, imagination, and culinary artistry that makes our creations unlike traditional cakes.

What began with the challenge of losing a job in 2008 became the inspiration to create a new path. I transformed my architectural skills into a new language—one where buildings, objects, characters, stories, and dreams could become edible.

This is how we express who we are, how we live, and how we design every UNIQUE cake.

We all face challenges, but looking back would you describe it as a relatively smooth road?
No, it hasn’t been a smooth road. Along the way, there were challenges such as overcoming setbacks, dealing with uncertainty, learning from mistakes, managing time and resources, and staying motivated despite obstacles. Each struggle helped build resilience and provided valuable lessons for future success.

Appreciate you sharing that. What else should we know about what you do?
I am a cake artist and pastry professional who specializes in creating highly detailed, architectural cake and gingerbread replicas. My work is known for combining precision, engineering, and artistry to produce realistic 3D structures that look just like scale models.

I have been recognized by my colleagues in the food industry as one of the best gingerbread artists for my building replicas, especially after participating in the Gingerbread Showdown that aired on Food Network last year. In the cake world, I have also become known as “The Baking Architect” because of my ability to create intricate 3D replicas of buildings with remarkable accuracy and attention to detail.

What I am most proud of is being able to apply architectural design principles to the pastry arts and build a unique niche for myself. My work stands out because it bridges two disciplines—architecture and baking—allowing me to create edible works of art that are both technically precise and visually striking. Being recognized for this unique approach by both my peers and the industry is one of my greatest accomplishments.

How do you define success?
For me, success is very simple: it’s waking up every day excited to go to work, doing what you love with passion, and never feeling like you’re just watching the clock waiting for the day to end.

Success also means having ownership of my time and the freedom to manage my life the way I choose. It means knowing that through my skills, dedication, and hard work, I can provide the life I want for myself and my family. Being able to create, continue growing, and enjoy the journey while maintaining that balance is what I consider true success.
