Today we’d like to introduce you to Lilly Galindez.

Alright, so thank you so much for sharing your story and insight with our readers. To kick things off, can you tell us a bit about how you got started?
I started Lilly’s Munchies while I was still figuring life out—going to the Art Institute pregnant, with a toddler at home, chasing a dream that felt bigger than my circumstances. It wasn’t easy, but I refused to quit. I took a leap and bought a food truck, pouring every ounce of creativity and grit I had into it. After that, we opened our first location, then our second, and eventually into creating our Pop Cakes—something that felt truly mine. We all face challenges, but looking back would you describe it as a relatively smooth road?
Along the way, there were plenty of challenges. I worked endless late hours, often exhausted but pushing through anyway. I had to build a menu from scratch—testing, failing, adjusting, and trusting my instincts. I learned content creation on the fly, figuring out how to tell our story online and get people to notice us. And one of the hardest parts was simply getting people to come—earning trust, building a following, and proving we were worth the stop. None of it came easy, but every struggle shaped Lilly’s Munchies into what it is today

Appreciate you sharing that. What else should we know about what you do?
I create desserts that are fun, bold, and a little unexpected. I specialize in turning classic ideas into my own, my version of pavlova, cookie cups, custom cakes, and our signature Pop Cakes. I’m known for desserts that don’t just taste good, but feel special and memorable. What I’m most proud of is building something original from the ground up and watching people connect with it.

What has been the most important lesson you’ve learned along your journey?
The most important lesson I’ve learned is that growth takes time. I had to learn real time management, how to balance family, creativity, and running a business without burning out.

Last year, right before my 37th birthday, year, I had a stroke while working at the shop. Recovering while running a business taught me even more about time management, patience, and resilience. It reminded me that growth takes time, consistency matters, and showing up every day—even after the hardest setbacks—is what truly moves you forward
