Today we’d like to introduce you to Tony Perrotta.
Hi Tony , it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
The story of Tony Waffles started when I was just a kid who loved waffles. My mom would make them from scratch, and they were the best especially topped with raspberry jam or pure maple syrup.
As I got older and started making them myself, waffles became my go-to. Whenever friends came over, I’d cook for them, and it quickly became “a thing.” That’s when my friend Bill pushed me to take it further—he kept telling me I needed to get out there and start selling them because they were just too good not to share.
So I did. I began selling at local farmers markets, small shops, movie nights—anywhere that would have me. I kept that going for about two years while also working as a restaurant server, before eventually taking the leap full-time. From there, I spent another three years building the brand through pop-ups before finally getting a food truck—easily one of the best decisions I’ve made.
It hasn’t always been easy, and there have definitely been challenges along the way, but it’s opened the door to some incredible opportunities. From serving on the main stage at major music festivals across Florida to setting up right next to Guy Fieri at the South Beach Wine & Food Festival in Miami—it’s been an amazing ride so far.
Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
I don’t think the restaurant business is ever a smooth road, but that’s what makes it fun. You never know what your going to get into, who your going to meet or what dishes your going to come up with next. Especially in the food truck world it can be crazy.. dealing with unexpected issues day in and day out, but when it all comes together at the right time it can be insanely gratifying and fulfilling.

Right now, we’re focused on large-scale music festivals and events across Florida, and that’s where we really shine. We bring a premium product to the festival scene—something unique, high-quality, and unforgettable. As we continue to grow, our goal is to expand our reach while staying true to what makes Tony Waffles special. We also participate in some local events in South Florida as well as catering events when they come up around the holidays, which can be super fun as we can come set up right in your driveway or workplace!
