Today we’d like to introduce you to Michael Galeano. They and their team shared their story with us below:
Chef Jon started working in kitchens when he was 16 years old as a dishwasher. One year later he began working as a prep/line cook. 4 years later he was a kitchen manager at the age of 21 at a franchise restaurant. Following his future, he held his role as head chef in multiple fine dining restaurants in the Orlando and Central Florida area, he finished his corporate chef job for Darden Restaurants in 2022 and jumped into his new gig for our food truck business where his talents are endless and too his heart.
Mike has spent his whole life in front of the house of restaurants creating wonderful relations and enjoying it every step of the way. Once he and Chef Jon met something told him that they could be the power team together once they start their own “thing”. It only took Mike 5 years of constant harassment to get Jon on board. 4 months later we are working our way up the food truck endeavor and having a blast and looking forward to what this journey has in store for Tight Lines Food Shack.
We all face challenges, but looking back would you describe it as a relatively smooth road?
The road has been a bit challenging, but we are up for all the trials and tribulations.

We are on a mission to be the staple fish sandwich in South Florida.
