

Today we’d like to introduce you to Katherine Ruiz.
Hi Katherine , it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
I’m a Venezuelan woman who has dedicated her life to following her creativity. I get excited about building projects and bringing to life every idea I truly believe in.
Back in 2011, I founded a pastry shop in my hometown in Venezuela. It was one of the first of its kind in the city and quickly became a local reference. We received national and international awards for quality, creativity, and innovation.
When I moved to the U.S., I had to let go of that dream to make space for new ones.
After a long pause, I felt called to reignite my passion for baking, this time with a new focus: creating creamy, healthy desserts. I took our original recipe book and began transforming each dessert into something suitable for celiacs and diabetics, without ever sacrificing the flavor that defines us.
Baking has always been magical for me, especially seeing the smiles my desserts bring to people’s faces. Now, with a deeper focus on wellness and health, I want to share my love for baking in a more conscious way. I want to redefine what dessert means in America, to prove that “dessert” and “healthy” can absolutely belong in the same sentence.
I began experimenting with recipes made without added sugar and using just a few clean, simple ingredients but still aiming for exquisite results. I’m deeply focused on achieving a texture, fluffiness, crumb, creaminess, and flavor that come as close as possible to the original indulgent version.
My goal is to create smart, nourishing desserts that help people shift their eating habits without feeling deprived of the joy of sweets.
As someone on a personal journey toward a wheat- and sugar-free lifestyle, I want to walk alongside others on their own path to wellness.
I truly hope my creations bring others as much joy as they bring me while making them.

Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
I believe nothing in life comes easy and that’s okay. What makes the journey lighter is being grateful for simply having the chance to go after your dream. With God in my life, every obstacle becomes a lesson that gives me more clarity, strength, and confidence to keep moving forward.
There are good days and hard days. Starting over in a new country, letting go of a dream you once built with so much love, and daring to try again, it’s emotional. It takes courage to say, “I’m going to do this again,” knowing everything is different now.
But that fire inside, the belief that you can that’s what keeps me going.
At the end of the day, the biggest challenge is not external. It’s internal. It’s the constant battle with your own mind, with self-doubt, and with the fear of failing.
But I’ve learned that the more I trust, stay grounded in faith, and keep showing up, the more the road unfolds even if it’s not always smooth.
Thanks – so what else should our readers know about your work and what you’re currently focused on?
I have a degree in Corporate Communications and worked as a university professor at Universidad Santa María in Eastern Venezuela. It was a truly meaningful experience to teach the same career path I once studied. I was in charge of classrooms with over 80 students. It was both challenging and incredibly rewarding.
For many years, I focused on teaching how to build powerful brands and develop creative projects. I’ve always believed in doing things differently. If something already exists, I try to present it from a new perspective, give it a fresh, creative twist that makes it stand out on its own.
What sets me apart is that I don’t create just to create. I look at every idea from different angles until I find the one that makes it feel original and authentic. I want each project to have its own soul, its own identity. And that takes vision, heart, and the courage to be different.
In every project I’ve built, from branding to baking ,I’ve left a little piece of myself: a seed of creativity.
That’s what I’m most proud of, staying true to my essence no matter what I do.
Is there any advice you’d like to share with our readers who might just be starting out?
If you have a dream in your heart, don’t let it go. Try. Try again. And again. One day, when the results begin to show, you’ll ask yourself, “Why didn’t I start sooner?”
Believe me, if something is calling you, go for it. Don’t wait to feel completely ready or fearless. Fear doesn’t go away, it transforms when you take action anyway.
And remember: nothing worthwhile is easy. But in consistency, you’ll find the results you’re looking for.
You don’t need to have it all figured out from the beginning. The path will guide you. Mistakes are part of the process, and each attempt carries a valuable lesson.
Also, don’t try to imitate what already exists. Your story, your style, your essence, that’s what will make the difference. Be yourself, even if not everyone understands you right away.
And be patient. Sometimes we plant seeds and expect instant results. But everything done with love and perseverance blooms in its perfect time.
