Meet Amber Antonelli of The Naked Bite

Today we’d like to introduce you to Amber Antonelli.

Thanks for sharing your story with us Amber. So, let’s start at the beginning and we can move on from there.
I moved to Miami in late 2011 and very quickly noticed that there was a substantial need for mindfully created conscious food. This was right about the time when other chefs in South Florida were just beginning to support the local farms and pay more attention to where they sourced their ingredients. There also was not a large emphasis on plant-based foods and it was clear to me that people wanted to learn to eat better but needed help. I had been cooking in restaurants and private homes since 1998 and I used this experience to create a platform for vegetable-driven culinary education, personal chef services and boutique catering. Gratefully we have been busy ever since!

Has it been a smooth road?
We got very busy quite quickly but our business model is a bit unconventional and that produced some challenges. We never have had a true brick and mortar location despite our success and that gets tricky at times with the volume that we do. Summers in SoFla can also be scarce but thankfully we do alright in the hot months.

We’d love to hear more about your business.
I would venture to say that we are the leaders in both South Florida and Austin for consciously sourced vegetable-driven cuisine that is not exclusively plant-based and caters to a wide variety of people and lifestyles. Our main goal is to make plants the BEST thing on your plate- so that you will want to eat them more often and enjoy healthier choices, not necessarily become vegan. We cook it all but vibrant, dynamic plant-ectric cuisine is our sweet spot. Nothing makes me more proud than to feed a group of omnivores (both men and women) a vegan meal and have them say that they would eat this way all the time if they had someone to cook for them!

Is our city a good place to do what you do?
I certainly feel like Miami is the perfect place for a business like ours. At this point, there are not many like us but the mission is catching on and the conscious food movement here has become more mainstream. People like to spend money in Miami as well- it is an unusual market in that way. Miami has been very good to The Naked Bite, we are very grateful! I think that it is well in its way to being a force in the culinary realm.
