Today we’d like to introduce you to Gonzalo Rubino and Matias Palloni.
Hi Gonzalo and Matias, please kick things off for us with an introduction to yourself and your story.
We met years ago while working in restaurants in Buenos Aires, Argentina, and quickly discovered a shared passion for hospitality and entrepreneurship. After relocating to Miami, we continued building businesses together and eventually launched several restaurant concepts.
By 2022, we found ourselves talking constantly about burgers. We both loved them, and we felt there was an opportunity to create something simple, approachable, and highly focused. Instead of trying to do everything, we wanted to do a few things exceptionally well.
That idea became Skinny Louie.
We opened our first location in Wynwood in November 2023. The response was immediate. Lines regularly stretched down the block, and we quickly realized we had created something people genuinely connected with. Since then, we’ve expanded throughout South Florida and into New York City, while staying focused on the same principles we started with: quality, consistency, hospitality, and simplicity.
We all face challenges, but looking back would you describe it as a relatively smooth road?
Like any growing business, there have been plenty of challenges.
One of the biggest lessons has been learning how to scale without compromising quality. It’s relatively easy to maintain standards in one location. It’s much harder when you’re opening multiple locations, hiring hundreds of team members, and serving thousands of guests every week.
We’ve always believed that quality and service are the core of the business. Cutting corners on ingredients, labor, or hospitality might help in the short term, but it hurts the brand in the long run. Staying disciplined around those values while growing quickly has probably been our biggest challenge—and our biggest priority.
Great, so let’s talk business. Can you tell our readers more about what you do and what you think sets you apart from others?
Skinny Louie is a smashburger concept built around a simple idea: great ingredients, cooked well, served quickly, and priced accessibly.
Our menu is intentionally curated. We focus on smash burgers made with fresh Black Angus beef, fries, shakes, and a few carefully developed menu items. That simplicity allows us to maintain consistency across every location.
What sets us apart is our focus. We aren’t trying to be everything to everyone. We want to be a great neighborhood burger spot that people return to again and again.
Brand-wise, we’re most proud of the loyalty we’ve built. The fact that customers come back regularly, bring their friends, and support us as we enter new neighborhoods means a lot to us. We’re also incredibly proud that our “Very Best Burger” earned top honors at both the South Beach and New York City Wine & Food Festival Burger Bash events in 2025.
Is there something surprising that you feel even people who know you might not know about?
People are often surprised by how much time we spend thinking about the details.
From the outside, Skinny Louie looks very simple—and that’s intentional. But creating something that feels simple requires a tremendous amount of work behind the scenes. We obsess over everything from the quality of the beef to kitchen operations, guest experience, branding, and site selection.
The goal is for the guest to experience something that feels effortless, even though there’s a lot of thought and planning behind it.
