Paul Heslop and Lucrecia Peralta Martinez, we appreciate you taking the time to share your story with us today. Where does your story begin?
Paul and I founded Essence Caterers in 2008 with the vision of creating more than just beautiful events; we wanted to create memorable experiences that bring people together. Our story began in the kitchens of Buenos Aires, where Paul grew up watching his grandmother turn simple meals into the heart of a celebration. Those early memories shaped his understanding that hospitality is about creating a feeling and lasting memories, not just serving food. Combining his culinary background with my passion for aesthetics and design, we built Essence Caterers into a family-owned company rooted in hospitality, creativity, and personalized service.

Launching a luxury catering company during a global recession was certainly a risk, but we believed that quality, attention to detail, and genuine relationships would always matter. What started as a small business grew through hard work, word of mouth, and the trust we built with our clients and partners throughout South Florida. Over the years, we’ve had the opportunity to cater everything from intimate gatherings to luxury weddings, corporate events, and large-scale celebrations, always with the same commitment to excellence and thoughtful service.

Like any business in hospitality, the journey has brought challenges, long hours, and constant evolution, but those experiences have shaped who we are today. More than 15 years later, one of the most rewarding parts of this chapter is seeing the next generation become part of the company’s evolution. Our daughter, Josefina, along with Sofia, who has become part of our extended family, are helping bring fresh perspectives and modern ideas into the business while continuing the values and foundation on which Essence was built.

At its core, Essence Caterers has always been about creating meaningful experiences and lasting memories through exceptional food, service, and hospitality.

Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
It definitely has not been a smooth road, but looking back, every challenge taught us something valuable. One of the biggest lessons came from stepping into entrepreneurship without a traditional business background. We understood food, hospitality, and client experience, but building and sustaining a company required learning an entirely different skill set, from operations and finance to leadership and growth management.

The events industry is also incredibly demanding because every event carries high expectations. There are no “off days” in hospitality, and behind every seamless event are countless moving parts, long hours, problem-solving, and adaptability. Over the years, we learned how important it is to stay calm under pressure, build a strong team, and continue evolving with the industry.

Like many businesses in the hospitality industry, we faced one of the most difficult periods in 2020 during the pandemic. Overnight, the events world changed completely, and we had to rethink how to navigate such an uncertain moment. It challenged us both personally and professionally, but it also reminded us how resilient this industry can be and how important relationships and community truly are.

We believe those experiences ultimately made us stronger, more adaptable, and more intentional about how we grow Essence moving forward.

We’ve been impressed with Essence Caterers, but for folks who might not be as familiar, what can you share with them about what you do and what sets you apart from others?
Essence Caterers is a full-service luxury catering and event company based in South Florida, specializing in weddings, corporate events, social celebrations, brand activations, and curated guest experiences. What matters most to us is creating events that feel personal, elevated, and thoughtfully designed from beginning to end. We believe catering goes far beyond food; it’s about atmosphere, emotion, hospitality, and how people remember an experience long after the event is over.

What sets us apart is the level of care and personalization we bring to every event. We work closely with our clients to understand not only their vision but also how they want their guests to feel. Beyond the culinary experience, we oversee all aspects of event production, including rentals, customized décor, entertainment, lighting, staffing, and overall event flow. Our goal is to create a seamless experience where every detail feels cohesive, intentional, and beautifully executed.

In addition to private and corporate events, we love collaborating on brand activations and experiential events, where hospitality becomes part of brand storytelling. These events allow us to be especially creative and develop immersive guest experiences that are engaging, interactive, and memorable.

Over the years, we’ve had the opportunity to work at many of South Florida’s most beautiful venues and to collaborate with incredible planners, brands, and creative partners. We’re proud that much of our growth has come through referrals and long-term relationships, which we consider one of the greatest compliments in hospitality.

Brand-wise, we’re most proud that Essence has remained both elevated and deeply personal as we’ve grown. Even as the company evolves, we’ve stayed committed to the values we were founded on: quality, integrity, creativity, and genuine hospitality. At the same time, we’re excited to continue evolving the brand through a new generation of ideas, perspectives, and experiences that reflect the future of luxury events and modern hospitality.

Is there any advice you’d like to share with our readers who might just be starting out?
One of the biggest lessons we’ve learned is that building a business requires far more patience, resilience, and adaptability than most expect. If we could sit down with our younger selves in 2008, we would probably say: trust the process, but learn the operational side of the business early. As creatives, it’s easy to focus only on the food, design, and guest experience, but a sustainable company is also built on systems, organization, logistics, and strong relationships behind the scenes.

We would also tell anyone starting out not to underestimate the importance of relationships. This industry is built on trust, reputation, and the experience you create for people. Much of our growth came through word of mouth and long-term partnerships, so treating every client, venue, vendor, and team member with respect truly matters. Your reputation becomes one of your most valuable assets.

Another important lesson is to stay open to change. Hospitality is constantly evolving, and being willing to adapt, learn, and embrace fresh perspectives is essential for growth. One of the most rewarding parts of our journey has been seeing the next generation, including Josefina and Sofia, bring new energy and ideas into the business while still honoring the values on which Essence was built. It’s a reminder that tradition is not static; it’s a foundation you continue to build on.

Most importantly, we would remind people to protect the reason they started in the first place. In hospitality, you’re not simply providing a service; you’re helping create meaningful moments and memories for people. If you can make a client feel genuinely cared for and fully present during an important moment in their life, you’ve done something truly valuable.
