Today we’d like to introduce you to Alex Palumbo.
Hi alex, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
My story really begins in Italy, where my father started our family business over 20 years ago. I grew up surrounded by food, tradition, and the belief that cooking is a way to bring people together. Those early memories shaped who I am today.
Over the years, I built my career in hospitality, becoming an F&B Director and owning a restaurant in New York City. But no matter where I was, I always carried my roots with me.
During the uncertainty of COVID, we took a leap of faith and brought our family tradition to Miami, starting with just a food truck, very limited resources, and a deep belief in what we were creating. We were the first to introduce authentic piadina to the city, making everything from scratch, just like we did back home.
Today, we have a shop at The Doral Yard, and we continue to grow through catering and large events with our food truck. Being part of our community’s celebrations and major Miami events has been incredibly rewarding.
This journey hasn’t always been easy, but every challenge has made us stronger. For me, this isn’t just a business, it’s about honoring my father, preserving our culture, and building something meaningful here in Miami.
I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
It definitely hasn’t been a smooth road. Starting during COVID was already a huge challenge , uncertainty, limited resources, and not knowing what the future would look like. We launched with very little capital and had to build everything ourselves, which meant long hours and a lot of sacrifice.
One of the toughest moments was losing a location we had our hearts set on in the Design District. As a small, unknown brand, we were competing with much bigger companies, and that setback led to almost a year of struggle and doubt.
But those challenges shaped us. They forced us to be resilient, creative, and disciplined. Eventually, we found our home at The Doral Yard, and from there, things began to grow.
Looking back, I’m grateful it wasn’t smooth, the obstacles made us stronger and helped define who we are today.
We’ve been impressed with Piadina 305 LLC, but for folks who might not be as familiar, what can you share with them about what you do and what sets you apart from others?
Piadina 305 is a Miami based Italian street food concept inspired by the traditions of Emilia-Romagna, where piadina is a true everyday staple. We bring that experience to South Florida in a fresh, modern way, serving gourmet Piadine made to order, all prepared right in front of our guests.
Everything we do is centered around simplicity and quality. We stay true to authentic Italian recipes while creating a fun, interactive experience where people can see their food being made and connect with our team.
What really sets us apart is the energy we bring. Our fully branded food truck is designed to stand out and become part of the event, whether it’s something large like Miami Open or a more intimate private gathering.
We’ve also recently launched La Gnocca, (@LaGnocca305) our new concept focused on house-made gnocchi and fresh pasta, bringing another layer of traditional Italian comfort food into what we offer.
We’re proud of the brand we’ve built, t’s clean, consistent, and reflects who we are: Italian at heart, but very much part of Miami’s culture. At the end of the day, we’re all about creating memorable moments through great food, great energy, and a genuine experience.
Are there any important lessons you’ve learned that you can share with us?
One of the biggest lessons we’ve learned is that consistency is everything.
No matter the size of the event, people remember the quality, the experience, and how you made them feel. Staying true to our roots authentic recipes, fresh food made on site, and great service, has been key.
At the end of the day, it’s the small details and showing up the same way every time that really builds a strong brand.
