Community Highlights: Meet Carolina Szlufman of Carov Nutrition

Today we’d like to introduce you to Carolina Szlufman.

Hi Carolina, we’d love for you to start by introducing yourself.
I’m a Registered Dietitian Nutritionist originally from Argentina and raised in Miami. I completed my Bachelor of Science in Dietetics with a minor in Food Science at the University of Florida, then went on to complete my clinical training at NewYork-Presbyterian Hospital, where I stayed for a 6-month ICU fellowship. That experience deeply shaped how I approach nutrition — with strong clinical foundations, evidence-based practice, and a deep respect for how complex and interconnected the human body is.

Over time, I realized I wanted to work more closely and consistently with individuals outside of the hospital setting. I transitioned into private practice, and support clients with a range of goals including weight management, cardiovascular health, diabetes, sports performance, and overall sustainable lifestyle changes.

My philosophy is anti-diet and science-driven. I focus on realistic, achievable, and sustainable habits rather than extremes. I believe nutrition should support your life — not control it.

I’ve also started building my own platform, Carov Nutrition, which reflects how I approach care: meeting people where they are and helping them make practical changes that feel aligned with their real lives.

Today, I continue growing my private practice and expanding my educational content — blending clinical expertise with relatable, practical guidance to help people eat better and live better in a way that actually lasts.

Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
It definitely hasn’t been a completely smooth road, and that’s been part of what’s shaped me both personally and professionally. Transitioning from a hospital setting, like the ICU, to building a private practice comes with its challenges—especially learning how to manage the business side of things while still focusing on patient care.

Another challenge has been balancing an evidence-based, science-driven approach with the realities and preferences of each individual client. Nutrition is never one-size-fits-all, and it takes time and patience to help people find what truly works for them in a sustainable way.

I’ve also faced the common struggle of growing a practice and platform independently, which requires constant learning, adaptability, and sometimes pushing outside of my comfort zone — whether that’s with marketing, content creation, or navigating insurance.

But every struggle has been a learning opportunity, and it’s made me more empathetic, flexible, and determined to help others make lasting changes that fit their unique lives.

My private practice and brand, Carov, are built around a simple but powerful idea: closeness — meeting people where they are and supporting them in making realistic, sustainable nutrition and lifestyle changes. I specialize in an anti-diet, science-based approach to nutrition that focuses on what truly works for each individual rather than one-size-fits-all rules or restrictive diets.

I’m known for blending clinical expertise with empathy and practicality, helping clients feel empowered to build habits that fit their unique lives, preferences, and goals. I work with a diverse range of clients — from people focused on weight management and heart health to athletes looking to improve performance, and anyone wanting to develop a healthier, balanced relationship with food. I also place a strong emphasis on education, helping clients understand the science behind nutrition in a clear, approachable way.

Brand-wise, I’m most proud of creating a space that feels genuine, supportive, and non-judgmental. Carov is more than just a practice — it’s a community and resource for sustainable wellness, built on trust and respect.

How do you think about luck?
I definitely feel very lucky in my journey. One of the biggest factors has been the incredible support from my family and friends—they’ve always encouraged my career and respected the choices I’ve made along the way. I’ve also been fortunate to have the freedom to build my private practice in a way that fits my life, allowing me to move, travel, and set my own schedule. That flexibility means I can really adjust to my clients’ needs when they require it, which makes the work feel more meaningful and manageable.

Overall, I feel lucky that things kind of fell into place—being able to combine my clinical background, personal values, and the right opportunities to build a practice that truly reflects who I am and what I believe in. It’s been a rewarding mix of preparation, support, and timing that’s allowed me to grow in a way that feels authentic and sustainable.
