Today we’d like to introduce you to Michelle Correa.
Hi Michelle, we’re thrilled to have a chance to learn your story today. So, before we get into specifics, maybe you can briefly walk us through how you got to where you are today?
I’m a personal trainer and nutrition coach by background, originally from Colombia. I was born in the U.S., raised in Medellín, and moved back to the States about four years ago with my husband, looking for new opportunities and a fresh start.
Back in Colombia, I ran my own gym for over 10 years. Helping people feel stronger, healthier, and more confident has always been my passion. I’ve also always loved cooking and experimenting in the kitchen—especially creating food that’s both nutritious and delicious.
That love for wellness and food, mixed with my roots, is what led me to create Rootsy—a brand inspired by the powerful cassava root, which is a staple in Colombian cuisine. After many recipe trials in my own kitchen, I landed on what is now our hero product: cassava waffles. They’re simple, nourishing, and naturally gluten-free—made to bring wellness and joy to every table.
I started Rootsy while still working full-time as a trainer, and for almost a year, I was making 100% of the production myself from a commercial kitchen—lots of late nights, early mornings, and sacrifice, but it was all worth it.
We launched locally in Miami with a distributor and got our first placement at Milam’s Market. From there, I realized that if I wanted to scale, I needed to find a co-packer—and thankfully, we did. That allowed us to grow not just in Florida, but expand to Texas, California, and across the Midwest. Today, we’re distributed by both UNFI and KeHE and have gained traction in amazing retailers like Fresh Thyme after winning a pitch slam competition.
Rootsy is more than a product—it’s a reflection of my journey, my culture, and my purpose. I left my job as a trainer in December to go all-in on Rootsy because I truly believe we can keep making a positive impact in a bigger way—one waffle at a time.
Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
Nothing truly meaningful ever comes easy—and building Rootsy has definitely not been a smooth road. It’s been a journey full of growth, challenges, and constant learning.
Coming from the wellness and fitness world, jumping into the food industry was a big leap. I had to learn everything from scratch—navigating manufacturing, compliance, working with large distributors, and understanding the retail landscape. It was overwhelming at times, but also incredibly rewarding.
One of the biggest challenges has been managing cash flow while trying to grow. Every decision matters—whether it’s choosing the right ingredients, finding the right co-packer, or investing in marketing. And, of course, learning how to negotiate with big distributors and meet the expectations of retailers, all while staying true to our mission and values.
There have been late nights, moments of doubt, and a lot of trial and error. But I’ve learned that every obstacle is an opportunity to grow—and I wouldn’t trade this journey for anything.

Networking and finding a mentor can have such a positive impact on one’s life and career. Any advice?
Never stop dreaming—and never think something is too out of reach to try. That mindset has helped me open a lot of doors.
One thing that’s worked really well for me is putting myself out there and applying to everything I can—whether it’s women-owned business programs, pitch competitions, accelerator programs, or CPG events. Every opportunity, big or small, can lead to meaningful connections.
Through those spaces, I’ve met incredible people—other founders who have inspired me, encouraged me, and even become mentors along the way. Right now, I’m part of an accelerator program where I’ve had access to amazing mentors who genuinely care and want to help me grow.
My advice: stay curious, stay open, and don’t be afraid to ask for support. You’d be surprised how many people are willing to help when you show up with passion and purpose.
