

Today we’d like to introduce you to Vicky Colas.
Hi Vicky , can you start by introducing yourself? We’d love to learn more about how you got to where you are today?
I was born and raised in Haiti until 14 years of age, where food and culture were always at the heart of my life until I migrated to South Florida in the summer of 1994. My culinary journey started at home, inspired by my family’s traditions, and grew into a passion for connecting people through food. I pursued formal training in culinary arts and hospitality, later expanding into dietetics and nutrition, which allowed me to merge the art of cooking with the science of health.
Over the years, I’ve competed on Food Network, launched multiple businesses including a commercial kitchen, a catering company, and a culinary consulting firm, and developed products like spice blends, restaurant concepts, meal prep concepts. What drives me is creating opportunities—not just for myself, but for other food entrepreneurs and my community. Today, my work blends culture, innovation, and wellness, and I continue to expand through education, product development, and storytelling.
I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
It hasn’t been a smooth road at all. Like many entrepreneurs, I’ve faced seasons of doubt, financial obstacles, and the challenge of balancing family life with running multiple businesses. On top of that, I’ve had to navigate through many obstacles that at times left me exhausted and questioning how I could keep going.
But every struggle became a turning point. The setbacks taught me how to be resourceful, how to build systems, and most importantly, how to prioritize myself so I could keep showing up for others. Those challenges pushed me to grow not only as a chef and business owner, but also as a leader and mentor in the culinary space.
Alright, so let’s switch gears a bit and talk business. What should we know?
’m the founder of A Unique Taste Inc., Pro Kitchen Hub, and Unique Culinary Group. Each of these reflects a different part of my passion for food, business, and community.
A Unique Taste Inc. is my boutique private dining and catering company, specializing in custom culinary experiences that blend Caribbean roots with French techniques and international flavors.
Pro Kitchen Hub is a 7,400+ sq. ft. commercial kitchen in South Florida that has supported over 80 food entrepreneurs—caterers, bakers, food trucks, and CPG brands—by giving them the space, tools, and guidance to grow.
Unique Culinary Group is my consulting firm, where I work with food brands, restaurants, and meal prep companies on recipe development, operations, and product innovation.
What sets me apart is the way I bridge culture, health, and business. I’m known for creating food that’s both soulful and elevated, and for helping other food entrepreneurs succeed by sharing my expertise and experience.
Brand-wise, I’m most proud that everything I do has a bigger purpose. whether it’s mentoring students, developing a spice line that Elevate my Caribbean Roots or designing culinary concepts that spotlight Caribbean culture. I want readers to know that my brands are about innovation with integrity: keeping food unique, fresh, and tasty while also creating opportunities for others.
Before we let you go, we’ve got to ask if you have any advice for those who are just starting out?
My advice is simple: just start, even if it’s not perfect. Too often we wait until everything is lined up, and the truth is, you’ll learn more by taking action than by over-planning.
I also recommend building a strong foundation—know your numbers, protect your brand legally, and create systems early, even if you’re small. These things will save you time, stress, and money later.
And don’t be afraid to ask for help. Mentors, peers, and community resources can make the difference between giving up and pushing through. When I started, I wish I had leaned on community and built a support system sooner, instead of trying to carry everything on my own.
At the end of the day, consistency, patience, and staying true to your “why” will keep you moving forward, even when things get hard.
