Today we’d like to introduce you to Lyndsay Peterson.
Lyndsay, we appreciate you taking the time to share your story with us today. Where does your story begin?
After moving down to the Keys from Delray Beach and working at several restaurants, I was very unhappy. When Covid hit and I was furloughed from my job, I sat down and wrote a business plan. I decided to offer a fully vegan menu, being that I have been vegan for almost 20 years and found that there were very few options for me to eat in the Upper Keys. We opened in November of 2021 and have been doing great ever since!
Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
Like so many business owners, finances were always a worry. Permitting and regulations for food trucks in the Keys are very difficult and that has caused a lot of ongoing issues. Finding staff has been our biggest struggle, along with finding ways to expand the operation with our influx of business.

Seaside Eatery is the only fully vegan food truck in the Florida Keys. We pride ourselves on attracting non vegan customers and helping to show them the more delicious side of plant based cuisine!
What quality or characteristic do you feel is most important to your success?
I am hard headed and diligent. I never give up, no matter how hard things get. This has helped me overcome so many obstacles in the past three years
