Today we’d like to introduce you to Alvaro Pérez Miranda

Hi Alvaro, we’re thrilled to have a chance to learn your story today. So, before we get into specifics, maybe you can briefly walk us through how you got to where you are today?
Born in Venezuela, Alvaro Perez Miranda studied art in the U.S. and Italy before moving to Tokyo. He spent a total of 15 years in Japan promoting Italian cuisine, eventually producing, building and managing more than 70 restaurant projects..

Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
It is never a smooth road; the journey of any venture often includes challenges and struggles. Common obstacles require you to stay focused in order to keep going. In Japanese, this is expressed as ‘Nana Korobii Yaoki,’ which means ‘never give up’ in simple words.

Thanks – so what else should our readers know about APM Restaurant Group?
We design and operate restaurants based on three simple principles: Omotenashi, a Japanese word that describes the concept of hospitality; mindfulness; and providing the best service. The second principle is Komakai, which means attention to detail, and the third is Sensai, referring to the delicate balance of sensitivity. Our restaurants focus on quality over quantity by serving a limited number of customers each day.

Have you learned any interesting or important lessons due to the Covid-19 Crisis?
Yes, the Covid-19 crisis has highlighted several important lessons across various sectors: Adaptability, Digital Transformation, Health and Safety and most importantly Community Support! In summary, the Covid-19 crisis has served us as a powerful catalyst for change.
