Today we’d like to introduce you to Chef Joseph Andrade.

Hi Chef Andrade, thanks for joining us today. We’d love for you to start by introducing yourself.
Everyone has something driven in them at an early age. Mine was passion. I always loved cooking that feeling when everything came together and the gossip afterwards. He can cook. Smiles and nobody left hungry. This was me at age 5. Making omelettes when mom was sick, and making dinner when dad came home late from work.

I started professionally with my mentor chef Traci McIlwain at the bottom of the brigade system years later possibly 10, I became his sous chef. Where I’m at now in my career is trying to accomplish an award Like James Beard I think my food needs a lot of recognition through my hard work.

Alright, so let’s dig a little deeper into the story – has it been an easy path overall, and if not, what were the challenges you’ve had to overcome?
Taking the life of a chef is a difficult task, and most of us when we succeed it’s a hard life.

We must sacrifice weekends, and holidays just to make where we work a difference slinging out the most delicious innovative food possible. For most of my life, I had problems learning capabilities I still struggle with it sometimes, but I know I’m a strong individual who can take on any task except real math equations.

Thanks for sharing that. So, maybe next you can tell us a bit more about your work?
I’m a chef, and I specialize in almost every cuisine. I’m just fascinated with flavor, ingredients, and smells. In this career, I’m always thinking about the next indigenous cuisine to learn or get my hands on.

What I like to get known for is my ability to adapt to the times of food culture. We chefs borrow Ideas cause I’m sure someone came out with that dish already, but how to make it better? Innovate it to become so much better.

I’m most proud of the chef I am and not fabricated to become something else. I made it when I worked at the Food Network South Beach Wine Food Festival there I worked with the best of the best.

I’m my person which sets me apart from other chefs. My madness works great no matter how crazy it might sound, look and sound.

What would you say has been one of the most important lessons you’ve learned?
Trust your instincts. Work hard be on time, clean & be organized & listen.
