Hidden Gems: Meet Ayshel Ashkenazi of International Kosher Chefs – IKC Global

Today we’d like to introduce you to Ayshel Ashkenazi.

Hi Ayshel, thanks for joining us today. We’d love for you to start by introducing yourself.
Hi my name is Ayshel Ashkenazi. At the age of 15, I started working in a fine-dine kosher restaurant in NY. I moved up the kitchen ranks quickly, from garde manger, making salads and desserts to being Sú Chef mastering all stations -butchering, grilling, sautéing, frying, plating, etc. After putting in two years at that restaurant, I decided to get more world experience and traveled. Some of the places I went include Spain, France, Israel, Canada, Miami, and the entire US East Coast. After bouncing from restaurant to restaurant and learning as much as possible, I decided to start my own company IKC (International Kosher Chefs).

I’m sure you wouldn’t say it’s been obstacle free, but so far would you say the journey have been a fairly smooth road?
During the pandemic, It was tough at first, having few connections and even less money. As my company was released, I made sure to keep an open schedule with my side work, so I could cater to clients at a moments notice. In the first year of my company, I was hired for only eight cooking jobs, but I didn’t give up. Though times were tough I persisted. I took on side jobs as a driver and courier for companies like Uber, Door Dash, Grubhub, & Amazon Now, and did pizza prep in my free time to continue growing as a Chef and company. Everything changed at the begining of my company’s second year. I advertised, made business cards, a website, and videos (Instagram Reels) of my cooking. Within that first month, I did over twenty different cooking jobs, and it has grown exponentially since!

One quote that changed everything for me was- “your Network is your Networth”. I’ve been living by that quote every day, and it changed me for the better. From being a closed-off person that didn’t socialize, to a super-friendly, outgoing, and easy-to-socialize-with individual. Another quote that made me more successful was, “you are who you surround yourself with”, which has proven itself to me many times. If you surround yourself with positive-thinking, smart, successful people, you’ll be positive, smart, and successful. If you surround yourself with negative, uneducated, unmotivated people, that’s what you will become.

Everywhere I go now, I introduce myself, I give out business cards and I keep in contact with a great deal of people every month.

Great, so let’s talk business. Can you tell our readers more about what you do and what you think sets you apart from others?
I specialize in International Kosher Cuisine, which fuses Mediterranean, Mexican, Asian, Middle Eastern and American cuisines which I use to invent new dishes and broaden my repertoire. I love to incorporate macro gastronomy in my cooking, and research ingredients to learn every aspect of the products I use, to ensure the highest quality for my clientele. As my company continues to grow, I’ve started offering additional services such as waitering, clean up, live music, luxury car services included with booking talented Chefs to cook for anyone, anywhere and anytime. Whether you’re in America or any other country, we can have the Chefs, travel, Shop, and Cook in your kitchen anywhere in the world, and leave it spotless on their way out.

We love surprises, fun facts, and unexpected stories. Is there something you can share that might surprise us?
Before I was a chef, I was a kid, who’d drink ketchup from the bottle. It got to the point that when I’d go out for pizza, the guy taking my order my order would ask “would you like a side of fries with your ketchup?”. Back then, I’d also mix anything (and everything) I could in the kitchen to see how it’d turn out. Since then my tastes have grown and changed. I’m coming on nine years of cooking experience, and learning to cook has made a lot who I am today. A successful, open-minded, entrepreneur, whose wildest dreams aren’t so wild anymore. By training myself to think outside of the box, I now believe that anything is possible. I’ve removed the word “impossible” from my vocabulary.
