Today we’d like to introduce you to Claudio Genovese and Luna Bertolotti.
Claudio and Luna, before we jump into specific questions about the business, why don’t you give us some details about you and your story.
We opened in Downtown Miami almost four years ago, when it was still challenging launching a restaurant in this area.
We believed in our craft and we devoted our mission on providing the best hospitality experience ever in this little oasis in the heart of Downtown Miami.
Our unique patio seating and our courtyard surrounded by other restaurants make you feel like you’re somewhere in the Mediterranean.
We were a key piece in the development of the alley in which we are located. Bringing growth to our community is a silent reward that fills us with true pride.
Has it been a smooth road?
It definitely wasn’t a smooth road.
Especially for the reason, I mentioned earlier regarding to how people used to think about the Downtown dining scene. However, we had a consistent uptrend in our business in the last four years. We are very thankful that we were able to build a loyal clientele.
We perform with conviction so we can stand behind our results. We consistently look forward for running by authenticity and a solution-based environment.

Alloy Bistro Gourmet is a modern Italian cuisine restaurant. We use the freshest ingredients in the market and every dish is prepared in house by our chef.
What sets us apart is that we were able to serve sophisticated “upscale” food in an average fast food area. The Miami Herald said about us that Alloy Bistro Gourmet is “bringing chemistry to Downtown Miami.”
Luna is the host of the House. She will make you feel you’re eating at your place enjoying a fantastic service. She will combine all the elements present in our restaurant to turn your visit into a food experience that fills all your emotions, sensations and memories.
Claudio is the Man behind the scene, is running the operation of Alloy Bistro Gourmet. On a permanent base, he works on the education of our team in order to empower them and make them aware of the important piece they occupy in our concept.
Together, working as we were a chemical alloy, We both give the best of our knowledge to put on the table a high-value experience.
Is our city a good place to do what you do?
It is a good place for a business like ours since Miami brings millions of tourists all year round. Our vibrant city, full of diversity and new opportunities is still a great place to create new business concepts. However, for anybody who is starting, it is not the easiest City. A few of the challenges are high rents, lots of competition and a few months of the year (Summer time) where the business is at a low pace.
