Meet Vanessa Frederic

Today we’d like to introduce you to Vanessa Frederic.

Thanks for sharing your story with us Vanessa. So, let’s start at the beginning and we can move on from there.
Let’s dive right in. I am a 21-year-old Haitian self-taught chef and the last girl of seven children. It all started in the 5th grade. Myself and a few others from North Miami Elementary were selected to experience different cuisines from around the world within a program called Common Threads at Florida International University. Ever since then, I fell in love with the culinary life. Food became my love language. I have had the opportunity to meet a lot of great chefs such as Guy Fieri, Mimi Chacin, and Michelle Bernstein, just to name a few. I’ve participated in the Food and Wine festivals as well. It is my dream to one day attends culinary school, open a restaurant of my own, or to become a celebrity private chef.

Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
Some struggles for me have been to cultivate my passion. I wanted to live out the Haitian “American dream” and wasted time going to Nursing school because that’s what my parents wanted. It wasn’t the best option for me. Furthermore, handling the capacity of people who want to try my food on my own is difficult. I’m starting to need all hands on deck and learning how to expand my business properly.

Please tell us more about your work. What do you do? What do you specialize in? What sets you apart from competition?
I specialize in private dinners and brunches and foodservice of my signature dishes. Shrimp Stuffed Salmon, Chicken and Waffles, Haitian Fried Patties (Pâté Kordé) are just to name a few. My wings are what blew me up. Honey Garlic and Sweet Heat Wings with Seasoned Fries and Signature Sauce took the cake for me. I also have two seasoning mixes for purchase to take your home cooking to the next level. Eventually, I’d love to have all my sauces, marinades, seasonings, and butter for purchase internationally.

What is your favorite childhood memory?
My favorite memory had to have to have been when I met Guy Fieri at Jungle Island during the Fun and Fit as a Family event. It made me feel encouraged and inspired to chase my dream when I worked with him.
