Meet Pat Solarino of Trattoria Novello

Today we’d like to introduce you to Pat Solarino.

Thanks for sharing your story with us Pat. So, let’s start at the beginning and we can move on from there.
Born and raised in Montreal, Canada among a kitchen of first-generation Italian family, I grew a passion for cooking by watching, helping, and learning alongside my grandparents. Some skills I’ve acquired are foraging wild mushrooms, making homemade pastas and wines to straining garden fresh tomatoes into tomato sauce.

Over 15 years experience and with a resume of working with some of the most influential chefs, I’ve decided that it was time for me to venture out into having my own restaurant. My wife and I are the heart and soul of Trattoria Novello and we invite the rest of you to celebrate the love of Italian food we grew up eating.

We’re always bombarded by how great it is to pursue your passion, etc – but we’ve spoken with enough people to know that it’s not always easy. Overall, would you say things have been easy for you?
Balancing life in the restaurant industry could be challenging at times. It’s long hours, exhaustion sets in, and so on. My wife and I, try our best to make moments during the busy times. On the weekends, we wake up early together to have breakfast. We plan date nights on Mondays, which is our only night off from the restaurant. We make the most of every day. It’s a constant balancing act.

So, as you know, we’re impressed with Trattoria Novello – tell our readers more, for example what you’re most proud of as a company and what sets you apart from others.
In 2016, Trattoria Novello opened its doors. It’s a classic Italian trattoria with a modern, rustic, cozy vibe and a soundtrack of Italian throwbacks shuffled with old and modern hits. We dedicate to presenting a menu, which balances the very best in traditional authentic Italian cuisine as well as creative specialties. We welcome you to stop in to experience our authentic and unforgettable creations.

So, what’s next? Any big plans?
My wife and I love to entertain. We want to do family-style dining nights at our restaurant. It creates a special occasion, whether guests are truly celebrating or not. The ambiance is comfortable and inviting. Guests are seated but served in a slightly more casual way. Passing delicious plates creates a way to start the flow of conversation. Drinking good wine with good food in good company is one of life’s most civilized pleasures.
