Meet Nekole St Juste of Nurse Neke’s Coconut Cakes in Orlando

Today we’d like to introduce you to Nekole St Juste.

Nekole, can you briefly walk us through your story – how you started and how you got to where you are today.
Coconut cake holds a special place in my family. It originally started with my grandma Doshia. She would bake a Coconut Cake for special family occasions. All though she had ten kids, there was only one in the bunch who learned her recipe and enhanced it, my mother, Shirley. I loved my mom’s version so much. I became that one out of the bunch to learn the ins and outs of what made her Coconut Cakes so special. Not only did I learn my mother’s technique, but I also added my own unique personality to each batch, thus giving birth to Nurse Neke’s Coconut Cakes as well as a variety of new flavors such as Strawberry Coconut, Chocolate Pecan Coconut, Pina Colada, Pecan Coconut, and with more to come!

We went from cooking out of our own kitchen to cooking in a commercial kitchen here in Orlando and expanding to taking orders online. You can find us delivering Cakes Friday through Sunday, but if you need a cake delivered during the week, we also have a chat feature on our Website that will allow you to chat directly with us during normal hours of operation.

We’re always bombarded by how great it is to pursue your passion, etc – but we’ve spoken with enough people to know that it’s not always easy. Overall, would you say things have been easy for you?
It’s been a rough road for us. We still work our full-time jobs in health care in order to fund our own dreams, but we also had no idea how difficult it was to start our own business. Needless to say there is always something new to learn each week, from finances to marketing and packaging.

So let’s switch gears a bit and go into the Nurse Neke’s Coconut Cakes story. Tell us more about the business.
Our company is a coconut cake-based bakery. Our Slogan Is “All The Flavor Minus the Frosting,” therefore letting every customer know that we do not use frosting or fondant on our cakes. We are all about keeping and highlighting the true flavors of coconut. What we are most proud of as a company is that we dare to be different and we don’t mind the challenge of creating our own lane. How many coconut cake companies can you count on one hand? Having a strictly coconut-based cake company sets us apart from others, and creates a conversation amongst everyone.

Has luck played a meaningful role in your life and business?
Luck has not played a role in our life and business. What has played a role in our life and business is our Faith in God. He has guided us from making cakes for just family and friends to creating a business that allows us to serve our customers.
