Meet Marco Pindo of Ristorante Sapori in Boca Raton

Today we’d like to introduce you to Marco Pindo.

Thanks for sharing your story with us Marco. So, let’s start at the beginning and we can move on from there.
Ristorante Sapori opened in January 1993 to stellar reviews and has continued to earn numerous 4-star reviews, Florida Trends Golden Spoon Award, One of America’s Best Italian Restaurants, as well as being one of the highest rated Zagat restaurants in South Florida with a Food score of 28.

For the past 25 years, Chef Marco Pindo has continued to delight the palates of diners. Always ahead of the curve, self-styled and innovative, Sapori has proven itself to be an enduring fixture in the ever-changing South Florida dining landscape.

Sapori is not just another Italian restaurant. While we do offer traditional Italian dishes, Sapori has become known for its “innovative Italian cuisine”, as well as the freshest fish and seafood and exceptional pasta sauces. Ristorante Sapori has remained on the cutting edge of Florida’s finest dining.

Ristorante Sapori is extremely proud of the many four-star reviews we have received throughout the years, but our greatest accomplishment is the reviews we receive every day from our valued patrons. As we celebrate our 25th anniversary, we extend our gratitude to our incredible following we are honored to have. Our advertising has always been “word of mouth”, and it has been as true to us as we have been to serving the finest and freshest food available, in a warm and caring setting. Chef Marco Pindo comes from the Abruzzi region of Italy. It is both there and in the United States that he has perfected his craft. An extremely talented chef, he has brought to South Florida the traditions of a true Italian restaurant. The freshest and finest ingredients, prepared in some of the simplest ways to bring out the true “Sapori” of the dish. Chef Marco imports many of his ingredients directly from Italy and has most recently returned from a trip there to secure Truffles for the coming season.

As he has in the past (he brought Chilean Sea Bass to South Florida 19 years ago), he was one of the first to introduce Branzini to the South Florida dining scene. Skate, Triple-tail, Corvina, etc….. you can be sure to enjoy fish not found in other restaurants. Lightly grilled, filleted tableside, drizzled with fine imported Italian olive oil, it is the closest thing to dining in Italy without having to take a plane.

Has it been a smooth road?
Since the beginning, it was a difficult road to travel. Sapori was not just another Italian restaurant. Marco brought the concept of East meets West to Italian cuisine long before it became popular. It was not always well received. People were not totally ready for the innovative items we had on our first menu. But we persevered and here we are 25 years later.

Is our city a good place to do what you do?
The restaurant business is challenging at best. There is a lot of competition. You need to do something to set yourself apart from others. Particularly if you are a small family run operation and not a corporate entity.
