Meet John Gallo and Rene Reyes of Pinch Kitchen in Miami Shores and El Portal

Today we’d like to introduce you to John Gallo and Rene Reyes.

Chef partners, John and Rene, opened Pinch Kitchen – a freestyle American eatery with an eclectic craft beer and wine selection, in November of 2015. The chefs first met twelve years ago while working at Casa Tua and even then they knew that one day they would open a restaurant together. Fast forward ten years and they opened Pinch Kitchen in the Upper Eastside of Miami.

Pinch focuses on small plates that are product driven, with the menu changing from time to time depending on what ingredients are available and in season at the time.

Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
As business owners there is never a smooth road. Every business owner will tell you that regardless of the industry, there are always challenges and obstacles you may be presented with. One of the struggles, would be not being able to always source our ingredients locally. As a restaurant in South Florida, it is difficult because we are extremely limited in regards to the vegetables and fruits that we can source locally due to the climate. We have to get creative and work with what we have and sometimes even compromising locally sourced ingredients. We do still work with small, independent farmers regardless of where we are sourcing our ingredients from.

Alright – so let’s talk business. Tell us about Pinch Kitchen – what should we know?
Pinch Kitchen is a freestyle, American eatery with an eclectic craft beer and wine selection. Pinch Kitchen focuses on small plates that are ingredient driven. We work closely with the local farms to bring in ingredients that are fresh and in season. We also change are menu from time to time and bring in daily specials based on our fresh ingredients.

We definitely have to thank our loyal customers that have been supporting us over the last two years! We wouldn’t be where we are today without them.
