Meet Federico A. Cassino and Sofia Rodriguez Kandeler of Paon Eatery in Bay Harbor Islands

Today we’d like to introduce you to Federico A. Cassino and Sofia Rodriguez Kandeler.

Federico and Sofia, can you briefly walk us through your story – how you started and how you got to where you are today.
We had a restaurant in Buenos Aires, Argentina. But every time we came to Miami (on vacation), we loved everything here. The lifestyle, the peace, the people, the weather, everything. So each time we came we were more sure we wanted to live here. Also, Miami is growing at a gastronomic level so fast, that we wanted to be a part of it. So we decided to come to live here after we got married! And so we did, two weeks after we got married here we were!

Federico is the Chef he studied culinary School in Buenos Aires and worked at Hisop, a restaurant in Barcelona with Michelin Star. There he specialized in Modern Mediterranean cuisine.

Once we started looking for a place for our new Restaurant we saw one in Bay Harbor Island, and we instantly knew that was the one! Also, we fell in love with the neighborhood, Bay Harbor Islands is beautiful!

We couldn’t feel more welcome! We are so happy to be here and to have the opportunity to share with you what we are passionate about.

Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
The fear we had was the acceptance. We didn’t know if our food and style would fit in. That was our biggest fear, but honestly so far so good! People are coming back and they recommend us to their friends! People feel comfortable and they appreciate what we do, and that’s something to be thankful for.

Please tell us about Paon Eatery.
We understand the value and respect for the quality products, is why we only work with suppliers that provide us the best raw material and we work with seasonal ingredients.

This way we can highlight the unique and natural flavors in every product we use.

Paon goes from traditional Latin American dishes to Mediterranean highlights. We have a Beer & Wine Bar and a variety of Tapas.

We love to share, so for us including Tapas was much more than the options itself, it was an opportunity to create a moment where people enjoy to share what they like.

Do you look back particularly fondly on any memories from childhood?
“I remember a lot the first time I tried Seafood, its freshness and the texture is what I never forget. The same happened to me with caviar, so salty and addictive.”
