Today we’d like to introduce you to Chef Julien Gremaud.
Chef Julien, can you briefly walk us through your story – how you started and how you got to where you are today.
I grew up under the exciting backdrop of Saint-Tropez, France. For as long as I can remember, I wanted to be a professional chef. I credit my mother for inspiring me to pursue my dream of opening my own restaurant. As a child, I spent many hours learning the basics of French cooking under her patient instruction in our family’s kitchen. She equipped me with the confidence and skill to become a professional pastry chef, even holding my first job at just 14 years of age.
Shortly after that, I left France to hone my skills at several of the finest restaurants in the UK including London’s Le Colombier and Goolies. In 2000, I arrived in the US at the age of twenty. I went on to hold positions at two of Chicago’s leading French restaurants: Le Francais and Le Vichyssois.
In 2002, I relocated to South Florida and accepted the position of personal chef for notable celebrities on Jupiter Island and Palm Beach Island. I joined Pistache French Bistro in 2009 as a consultant, moving up to executive chef within weeks. Two years later, I was promoted to partner and co-opened Palm Beach’s famed seafood eatery, PB Catch. Finally, in fall of 2014, I opened the doors of Avocado Grill in downtown West Palm Beach. This January, I am proud to share that we opened our second Avocado Grill, located in the popular Downtown at the Gardens in Palm Beach Gardens. We are excited to see what the future holds for us!
And, despite a non-stop schedule, my passion is supporting local charities and I love spending time with my wife and son, as well as our labrador retriever.
Has it been a smooth road?
Opening and running restaurants will always keep you on your toes. As any restaurateur and chef knows things are always evolving in our industry and you have to evolve and work through it. We had a couple of major delays when opening our second location.
There was a hurricane and then the holidays so we were way behind schedule. There are always going to be things that happen in life that are out of your control. You just need to handle them as best as you can.

Avocado Grill, with locations in downtown West Palm Beach and Palm Beach Gardens, is the trendy culinary destination that continually offers imaginative artisanal cuisine.
Small plates of seasonal, locavore-driven fare, ceviche and a raw bar spotlight an expansive menu that includes fresh, house-made desserts and a sophisticated collection of wine, beer, and signature libations.
Avocado Grill serves lunch Monday through Friday, weekend brunch, and dinner seven nights a week at both locations. Happy Hour is Monday – Friday and features two-for-one specialty drinks. Indoor and open-air seating areas provide plenty of inviting space to relax with friends and family in addition to the colorful bar.
We are most excited to see how this second location does. We had great success with Avocado Grill’s flagship location. It is exciting to see the response in this new area and how we are received.
