Meet Alison Roldan of Sequoia Baking Co. in Kendall

Today we’d like to introduce you to Alison Roldan.

Alison, please share your story with us. How did you get to where you are today?
I used to bake in high school to help my parents alleviate some of the fees associated with being in the Marching Band. What started as an after-school hobby, has turned into a life-long passion of mine.

Earlier this year, I had the opportunity of interviewing with you. Thank you for reaching out once again. I am so proud to share that in less than eight months, Sequoia Baking Co. has grown exponentially. Over this time, we have truly defined who we are. what we sell, and where we want to go.

One day driving home, I just thought to myself, what is one item I would love to bake every single day. Cinnamon Buns came to mind, and just like that, I was on the search for the perfect brioche recipe.

Of course, I couldn’t just offer one flavor, so I started experimenting and I am proud to say that we are the first Speciality Gourmet Bun shop in all of Miami. (Maybe even the nation, who knows!). We offer a wide variety of fun flavors. You really need to try our Hazelnut Latte Bun!

We’re always bombarded by how great it is to pursue your passion, etc. – but we’ve spoken with enough people to know that it’s not always easy. Overall, would you say things have been easy for you?
Absolutely not.

I work a full-time job, and I bake for hours at night. Because I like my cinnamon buns for breakfast, I wanted my buns to be enjoyed fresh in the mornings. So, I sought out to start this company with a schedule that would fit my full-time and also make sense to the consumer. I take online orders Monday-Friday and on Saturday mornings, my team delivers our Buns all over Miami.

On Friday nights, I barely sleep. I wake up at the crack of dawn and I get to work. All of our buns are baked fresh on Saturday mornings and delivered within hours.

Some weeks, I get 15 orders, other weeks, I get five orders. Every Friday night at 2:00 am, I contemplate my choices. I contemplate them again when I wake up at 5:30 am, and I contemplate them again at 1:00 pm when I have a mountain of dishes to wash.

I just have to keep reminding myself that one day, I will have a full team to help me, not only deliver but to help me in the kitchen.

My advice to anyone is to keep pushing. Keep working. Keep striving.

So let’s switch gears a bit and go into the Sequoia Baking Co. story. Tell us more about the business.
As I mentioned earlier, Sequoia is Miami’s first Specialty Gourmet Bun shop. We exclusively sell cinnamon buns and have several flavors to choose from.

I am most proud to say that every week, we are reaching new people. It’s exciting to see a new customer place an order. What’s also amazing is that I have returning customers weekly, I even have some regulars that order 3x a month. Little by little, we are growing into a family, and I am so thankful for all of our Honey Buns!

Honestly, I know we are all working day in and day out while chasing our dreams at night. I am no different than anyone else starting a company. However, you can count on Sequoia to always push the boundaries with new flavors each season. We are just getting started!

Has luck played a meaningful role in your life and business?
I can’t say that luck played any role in my life and business.

I don’t believe in luck, I believe in faith and I believe in a positive mindset and productivity. When you change the way your mind thinks; when you arrange your schedule to be productive for your company, and when you seek strength from above, your surroundings will change.

It’s what’s worked for me.

My advice is to start saying “No” when incited to different outings, dinner parties, and coffee dates. Start listening to productive podcasts on your commute to work, instead of the radio. Start valuing the hours you have in a day. Your time is the most valuable asset you have. It’s the only thing you’ll never get back.
